It’s the season for fresh crop Costa Rican coffee. First up is an ET47 natural from Los Alpes, a farm located on the slopes Costa Rica’s highest peak of Cerro Chirripó.
Los Alpes is part of Aromas del Chirripó, a wet mill run by the Acuña family. Although they’ve been growing coffee and selling cherry to third-party processors for generations, the Acuñas decided to take more control of their own value chain and have been processing from their own mill since 2021.
ET47 is one of the rarer varieties they grow on their farm, an Ethiopian landrace that made its way to Costa Rica via Toño Barrantes. It carries all of the outstanding characteristics of Ethiopian coffee, such as juicy fruit notes and crisp acidity, elevated by Aromas del Chirripo’s approach to the natural process. The cherries were dried for a few days in the sun, fermented in GrainPro bags for several more days until it transformed to desired flavor profile, then finally fully sun-dried to completion. The result is a cup full of strawberry and tangerine notes, with a clean and balanced profile.
