Friday nights close out at aqua with Soware from 6pm to 10pm. DJ-led sets move through Spirit Bar and terrace seating as cocktails and glass pours carry the night. A weekly Friday gathering point above the harbour.

Some dishes stay with a chef long after the meal ends. For Chef Romeo, it was octopus eaten near the Southern Italian coast, paired simply with ’nduja by a fisherman who understood the balance between sweetness and spice.

In aqua’s Italian kitchen, patience shapes flavour. The North Italy-style “Cannelloni” Ossobuco is layered with a marrow-rich ragu prepared slowly over two days, allowing the sauce to settle into deeper complexity before it reaches the pasta.

The dish draws from Chef Romeo’s mother’s lasagna, reworked with a lighter structure that still holds the richness of Northern Italian cooking. Part of The Essence of aqua until 18 June.

Father’s Day at aqua runs across 19 to 21 June, where Japanese and Italian kitchens work in parallel across the same table. Sashimi arrives cold and precise, followed by handmade pasta and warm dishes built through controlled heat and timing.

On 19 and 20 June, Father’s Day Brunch is available at HK$588 per guest, centred on shared plates and open seating across the harbour. On 21 June, service continues with Father’s Day Brunch at HK$688 per guest during the day, followed by an Evening Brunch at HK$788 per guest. The evening service includes a Monkey 47 Negroni on arrival for each father. Time at the table settles easily when it’s shared with Dad.

In Japanese cuisine, clarity is not an absence — it is a result of careful decisions, where each element has space to be understood.
The Somen Noodles with Scallop and Sakura Shrimp Crisps reflects this sensibility. Delicate strands of somen meet the natural sweetness of scallop, lifted by the gentle crispness of sakura shrimp. The composition remains light, yet layered with quiet umami.

Refinement here is shaped through heat and time. The Japanese kitchen prepares a steamed egg custard until its texture settles into silk, before folding in Ise lobster for natural sweetness.

A lobster miso bisque is added for depth, drawn slowly and reduced with care. Available on The Essence of aqua tasting menu until 18 June.
