來到大家一致最期待的🥐 一週，果然沒有失望
每天抱着大量新知識，飽滿的肚子以及兩手食不完的成品回宿舍🥖

3天造了17樣品項，chef真的真的很厲害！其中有6個品項都沒有出現在課程，只因我們要求想學就造了出來🥹

這週過得很快很充實。大家都好享受 viennoiseries, brioches 的 folding , shaping。而且每一個造型每人的成品都好平均。本身覺得面包很難掌握 (加上對面包的知識不多), 但這週之後覺得 viennoiseries 的可塑性很高，同一個dough可變化出無數造型。 (圖中的 New York roll, bow tie , crown, pain au chocolate, pain Swiss, flower 都是同樣的dough ) 即使是牛角酥，single/ double fold 以及shaping 的厚度直接影響成品的立體感，圖4,10 希望大家看到唔同的切割面都能感受到。然後就明白為何法國每年都會選出meilleur croissant。每間 boulangerie 都有着代表自己性格的出品，回來後我都很想試驗更多 viennoiseries 啊！

雖然無花果季節已過，但太想念這個純素咸蛋荔枝綠茶無花果馬卡龍，所以決定要給他一個版面😗
然後其實每年無花果季到臨我地都有用上他試作蛋糕，但都未能做出令人(我)滿意的作品🤣今年的無花果感覺比以往好吃，因此感恩🌏造就了2款無花果甜點，又能在自己to do list劃劃✔️讓我們期待來年啦！

萬聖節絕不能沒有南瓜🎃 我們採用100%日本南瓜製作香濃的純素慕絲以及內餡的炒南瓜蓉。糖炒南瓜蓉是想像炒栗子檔的濃濃焦香的煨蕃薯，每次吃都有秋季旅行的回味🖼️為了再強調炭焙香氣，我們在中間放入香月園焙茶純素慕絲，帶炭焙木香的焙茶有助解除甜膩。
