JEE features the 2007 vintage Dongqu Shaoxing wine—a single-vintage, handcrafted yellow wine matured through 17 years. Bringing profound depth, it is transformed into an exquisite cocktail that transcends East and West. When Eastern yellow wine encounters Western tonic water, the gently bitter bubbles delicately bloom on the palate, instantly awakening the aged spirit’s unique and complex aromas of dried tangerine peel, agarwood, and citrus. Refreshing notes interweave with mellow richness, sketching out a truly distinctive modern Eastern charm.

Glutinous Rice Risotto with Abalone and Aged Comté Cheese

A comforting dish featuring dried scallop glutinous rice topped with a tender South African abalone. The abalone is braised in a homemade abalone sauce, and the dish is finished with drops of lotus leaf oil to evoke the traditional sensation of lotus leaf rice. To finish, 36-month aged Comté cheese is shaved tableside for an added layer of nutty richness.

鮑魚荷葉飯

糯米飯加入瑤柱蒸煮,鋪上以自家製鮑魚汁燜煮的南非鮑魚。最後滴上荷葉油,營造出傳統荷葉飯的清香,口感軟糯鮮美。最後現磨上 36 個月 Comté 芝士,令香氣更上一層樓。

Introducing Terence, our Senior Assistant Manager at JEE.

With a background in hospitality management and five years as a cabin crew member, Terence brings a global perspective to our team. His journey led him to earn a WSET Level 3 certification in which he spent three years as a sommelier before stepping into JEE. He oversees daily operations and reservations, acting as a vital bridge between our kitchen and front-of-house.

Born and raised in Hong Kong, Terence finds a special connection to JEE’s philosophy. He takes pride in showcasing innovative cuisine that celebrates the local flavours he grew up with, creating a meaningful bond between the ingredients and our guests.

To fully appreciate this sensory journey, we recommend a two-step approach: first, take a sip from the side without the chocolate powder to experience the pure, spirited fragrance of the Wu Liang Ye.
