Christmas festivities permeate the air, but are you prepared for New Year which is peeping just around the corner? Toast to a better tomorrow over six creative courses of New Year's Eve revelry, LE PAN-style. The fun begins with Champagne and Chef Edward’s ingenious caviar, mackerel and oyster Martini (pictured). Sumptuous standouts follow – Patagonian toothfish, winter truffle paired with duck foie gras, wagyu ‘lapsang souchong’ – before a luscious finale of dark chocolate, chestnut, rum and raisin.

Enjoy a wondrous, heart-warming and, yes, white Christmas in LE PAN’s pristine, glistening dining rooms. The festivities begin in earnest the week before Christmas with an indulgent Yuletide lunch – five aromatic courses including caviar, duck foie gras and winter truffle, wagyu short rib and Dauphinoise potato doused in red wine (pictured), and spiced stone fruit with Chantilly cream. Chef Edward, naturally, is at his creative best on Christmas Eve, presenting a six-course feast culminating in quail dressed with Périgord truffle and Marsala sauce, and a sinful sweet of dark chocolate, chestnut and rum & raisin.

Proving there’s no rest for the wickedly innovative, the team are back with a bang on Christmas Day, delivering a hedonistic lunchtime spread with free-flow RSRV Champagne to blow all hangovers away… And on Christmas night, joy fills the holly-decked halls for another splendid six-course celebration, opening with the chef’s acclaimed caviar and mud crab Martini.

Single malts cherry-picked from Scotland’s best distilleries and matured in selected fine casks make their way to LE PAN’s table on Saturday, 4 December for a Whisky Feast. Savour Wilson & Morgan’s elite range alongside Chef Edward’s creative contemporary cuisine enhanced by his own skilful selection of Asian flavours. Sip Ardmore 9 Year Old single malt with caviar, oyster and ocean trout infused with lapsang souchong tea, and Caol Ila 2011 single malt with tiger prawn ravioli in Thai bouillon. Duroc pork belly risotto with winter truffle and Glenrothes 18 Year Old single malt finished in a PX Sherry cask make another heart-warming winter duo.

The fruits of the sea star in Chef Edward’s new lunch menu. Hokkaido scallop dressed with a ceviche of his favourite Asian greens rests atop brilliant, bold, bi-colour pineapple tomato in this most refreshing of appetisers, while a citrus coulis adds tropical appeal to ocean trout and Baerii caviar. Follow with an alluring main of Chilean sea bass backed by Brittany’s signature haricot beans and aromatic smoked capsicum.
