Back from Japan, after full weeks of working at the Tea farm and meeting Coffee roasters across Kyōto and Osaka, here we go, let’s try together?

Cerafilter coffee, made of Arita earth-ware with more than 400 years of experience, the ingredients are mixed and wetted with water from the natural well in Arita, and soil is molded which requires detailed modification by human hands then baked in the kiln for tens of hours.

Resulted in very smooth, mellow and precisely described tasting notes from its beans.

Some Orange Juice, anyone?

For this microlot, pink bourbon cherries were strictly picked with the same level of ripeness, exposed to a dry anaerobic fermentation of 48 hours with tangerine skin, and later shadow-dried in parabolic beds mixed with tangerine skin to ideal moisture content.

The results are outstanding and a overload of well structured and balanced floral, orange candy notes.

**New Beans Alert**

Like most coffees grown in Rwanda, this coffee is of the Bourbon (Jackson Bourbon) variety - the classic sweet and round profile. Climate is subtropical highland climate or temperate oceanic climate with dry winters, giving the coffee a cool weather for slow growing, but yet allowing 5 to 8 hours of sunlight per day throughout the year like any country located along the Equator.

The cool climate and careful wash processing bestow it with clean flavour notes of raspberries and other red berries on a citrus base, turning into heavier notes of pear, plum, honey, cocoa nibs and brown spices when it cools. Mouthfeel is syrupy, full-bodied but soft. A coffee grown within a bio-rich area is always exciting!

**NEW BEANS ALERT**

Unique, Rare.

This micro-lot of Castillo beans comes from Jairo's Finca Villarazo, in the Quindío region. They undergo a special type of processing invented by Jairo, called Ice Fermentation. The beans are exposed to dry anaerobic fermentation for 24 hours, later placed in grain pro bas for 60 hours maintaining a temperature below 22 degrees Celsius and thereafter frozen for further 72 hours. This results in a very slow fermentation and flavor development.

This beans went viral around 2019, winning countless award from 2017 around the world till now for its quality, from the Hacienda La Esmeralda farms is one of the most unique flavor profiles in coffee to this date. Normally, a coffee cherry develops two seeds. When a coffee plant cannot deliver sufficient nutrients to its cherries, only one bean is formed. The resulting bean is called a peaberry. It is also known as the pearl bean, due to its distinctive rounder shape.

Peaberry lovers and some professional coffee graders also believe that because the single peaberry bean receives all of the nutrients of the coffee cherry rather than sharing with another seed, peaberries can have more caffeine and taste sweeter than other beans as well.

This unique one has sweet aftertaste and hint of herbs 🌿

PINK BOURBON • HONEY PASSION FRUIT MACERATION • QUINDIO

Created by Jairo Arcila in Finca Villarazo, which is seated on fertile volcanic land, this coffee uses Pink Bourbon varietal, a rare cultivar created from the hybrid of Red Bourbon and Yellow Bourbon. This varietal stands out in every way, from the striking pink color of its ripe coffee cherries to the sweetly complex flavor of its beans.

For this microlot, this coffee was exposed to a dry anaerobic fermentation period of 72 hours with the pulp on. During this fermentation stage, dehydrated passion fruits and wine yeast were added as a compost. Afterward, cherries were pulped and then left to dry on raised beds with passion fruits placed amongst the coffee until the ideal moisture content was achieved.

The results are an outstanding and perfumed passion fruits notes with a balanced notes of panela and lingering sweet chocolate in the aftertaste.
