Made these two zero waste, vegan, glutenfree beauties today. The first is a masa miso caramel, corn crackle toffee cake. Made miso from left over masa a few years ago, and it's been fermenting away beautifully. It adds a delicous funk to the salted caramel. The corn crackle toffee is made from nacho chips that are too small to serve, they're blended, and candied with coconut sugar. They're good. Pic 2 is an organic cherry Okara cheeze cake make from .ie 's byproduct, okara.Okara is the soybean pulp and husk left over after making tofu, and it's packed with fiber and protien. We use their tofu to make our melty cheeze for rubens, our tofu scramble for brunch, and our kimchi cheezy tofu toasties. They give us their okara for free. By reducing waste, we also can reduce the cost of food for y'all, and feel smug about it. 3rd pic is Mr. Waynderful's salad special. It's a s**take beetroot kofta, glazed beets and horseradish beetroot schmear, gingery chickpea salad, spring onion sunflower pate, kraut, local leaves, pickles, raw seed crackers, and kombucha vinegarette. Y'all miss them Co op salads, well we gotcha! Last pic is for the awesome event tonight at the Night Time Co op. Come regulate your nervous system with the great woman that is Deirdre Ryan. Big thanks to and for the great food review in The Weekend paper. I especially love that Joe Mc Namee seems to understand that the way that we make our food, from the origin of the raw ingredients, to the folx who stir, bake, and serve it, is a part of our ethical, and very 'radical agenda'. We want to keep food affordable, pay our local farmers a fair price, pay all of us workers a living wage, and keep the menu zero waste. That on top of rates, rent, and fixing every piece of 40 year old equipment that we have inherited is a tall order.... but we're gunna do it! We are so lucky to have the opportunity to keep the spirit of The Quay Co op alive, and it's going to take all of us to keep it going! Our food is great, but that's just a small part of keeping this place alive. We're starting a night time co op to offer a space for the community to come together and, create art, music, zines, books, skills and just share time together. The Night co op is our solution to covering overheads for the business and the building, and meet the urgent need for communal affordable spaces in the city. If this works, it'll be Anarchism 1 Capitalism 0, and more spaces will be able to use this template to work together to enjoy a multiuse shared cafe facility. We have a couple of whopper gluten free cakes coming at ya today. A triple decker toasted coconut caramel walnut brownie cake, and a triple decker miso caramel corn crackle. Gluten free vegan baking is hard! But we believe that even if you can't digest gluten, and don't want to consume animal products , you still deserve decadence. We're working on a vegan ermine buttercream recipe using apples and their skins to stabilise (instead of loads of sugar), and we make our own butter for the buttercream to save on money and packaging. The cinni buns in the last pic are vegan brioche, full of that butter, and gluten. We haven't yet mastered the gf cinni bun. Hope to see y'all in the cafe this weekend! We're open Wednesday- Sunday.

Our first Calander Making Party is on this Monday, hosted by us, My Goodness, The Council of Moms ( if you know, you know, if you don't, sign up and you will) and as our official Calander maker for June. June is our pilot month, we're testing the waters to see how this experiment goes. Already we have Shape Note Singers, Zine Nights, Radical Artist Talks, Fermentation Workshops, what else is on the agenda? I dunno! Ya gotta come and find out. The more folx who get involved, the better.
