The process of preparing our 8oz seared dry aged fillet steak begins long before it reaches the pan, with a careful ageing process that deepens flavour and enhances tenderness.

When it is ready, it meets the heat, seared to form a perfect crust that locks in all that intensity. Around it, the plate comes to life with caramelised baby onions for sweetness, crisp pancetta for a savoury bite, and earthy morel cream adding depth.
