A wet and windy Bank Holiday Monday didn’t stop us from bringing a taste of autumn to the University of Limerick!
Yesterday, Chef Michelle joined Campus Life Services at the Pavilion Restaurant for another successful cooking demonstration, sharing practical cooking skills, simple seasonal recipes and creative ways to make the most of our ingredients while reducing food waste & food cost!
The star of the show? Â Seasonal pumpkin and butternut squash, freshly harvested from our own Organic Ellan Farm in Ballyneety, just 14km from UL.
Our A Taste of Autumn demo showcased four delicious recipes that are easy to recreate at home:
- Thai-Style Pumpkin & Coconut Soup with Lime
- Squash Fritters with Pickled Red Onion & Toasted Pumpkin Seeds
- Roasted Pumpkin Hummus with Flatbread
- Pumpkin & Dark Chocolate Traybake
From making the most of seasonal produce to turning pumpkin seeds and other ingredients into something delicious, the focus was on demonstrating that sustainable, zero-waste cooking can be simple, practical and full of flavour.
At Master Chefs, we believe sustainability starts with the ingredients we choose and how we use them. With Ellan Farm, we’re proud to bring our farm-to-fork philosophy to life, connecting locally grown, organic produce with the food we prepare and the communities we serve.
A big thank you to Campus Life Services and everyone who joined us at the Pavilion. And of course, to Chef Michelle for sharing her knowledge, creativity and passion for seasonal cooking!
