Whatever their background, ethnicity or beliefs, ask anyone what absolutely must be baked at this time of year in their household, and their recipes will often start with copious amounts of butter, tradition and love.
Call me old-fashioned, but there is something deeply comforting about traditional Christmas baking. As I reach out for those certain cake tins that only come out once a year and stock up on those particular ingredients. It can only mean December festivities are soon to begin! I get a familiar warm feeling deep inside. It’s time to turn to my trusted recipes for the customary plum cakes, cookies, breads and desserts of the season. It’s also time to plan the menu for my traditional Christmas hamper, order festive and fancy packing material, cut loads of parchment paper sheets, pre- heat my ovens and begin some serious baking.
The nature of our Christmas baking traditions too is unique, starting with the spices. Divinely aromatic cinnamon, ginger, allspice, cardamom, cloves and nutmeg have a beautifully grounding effect. These paired along with the nuts and dried fruits that were introduced during the Middle Ages, quickly became the cornerstone of so many festive baked delights. Gutsy, earthy and wickedly delicious…… dense plum cakes, sticky toffee puddings, panettones etc!! It’s also high time for some edible gifting with traditional Christmas cookies, biscuits and truffles. All comfort foods!
Featured here is my hamper of baked goodies with many customisations as requested! Due to time constraints this year, could not include my signature truffles, chocolate barks and madeleines. .
