Here’s one for all the seafood lovers. Our prawn in Yuxiang sauce - a “fish fragrant” Sichuan blend that uses aromatics like garlic, ginger, scallion, black vinegar, doubanjiang, and a dash of sugar to enhance the flavour of seafood.

It’s got succulent pork, fresh cucumber, and the earthy crunch of peanut - but the best thing about this dish is the dressing. Ever since our last exploratory trip to China, we’ve had a bit of a sesame obsession. In the mainland, sesame paste is used as a condiment alongside chilli oil and all the other usual suspects. So of course we had to create our own roasted sesame paste, but with a Sichuan kick. Turns out it’s the perfect dressing if you like earthy dishes with a healthy dose of freshness and heat. Traditionally, claypot cooking is a technique that focuses on meat, but if you’ve ever been to Zhouyu, you’d know that we never want our vegetarian friends to miss out on something delicious. We wanted to recreate that same experience and depth of flavour, but in a vegetarian dish.

We took 3 kinds of mushrooms with varying textures, and made a sauce bursting with the deep, rich flavours of umami. A dish that is as hearty and delicious as any classic claypot, with no compromise.
