Brinjal fry

Heat oil in a pan ,add mustards seeds ,cumin seeds when they start to splutter add chopped brinjal to it and saute for a while till brinjal oozes out its own flavors then add salt, tumeric powder ,red chilly powder and coriander powder mix evenly and saute till the brinjal shrinks then finally add lashes of crushed garlic to it saute few minutes and switch off the flame.Now its ready to serve with rice or chapathi..๐Ÿ‘

โ†’ Oil - 5-6 tablespoons.
โ†’ Mustard seeds - 1 tea spoon.
โ†’ Garlic - 2 clove.
โ†’ Fenugreek seeds - 1 pinch.
โ†’ Onions(chopped) - 1/2 cup.
โ†’ Salt - to taste.
โ†’ Curry leaves - 1 spring.
โ†’ Green chillies - 2-3 numbers.
โ†’ Ginger garlic paste - 1 tea spoon.
โ†’ Turmeric powder - 1/2 tea spoon.
โ†’ Tomatoes (slices) - 2 numbers.
โ†’ Coriander powder - 1/2 tea spoon.
โ†’ Red chili powder - 1 tablespoon.
โ†’ Tamarind juice - 1/2 cup.
โ†’ Fish pieces - 4-6 numbers.
โ†’ Coriander leaves(chopped) - 1/2 tablespoon.
โ†’ Water - as required.
Directions
Heat oil in a pan, add mustard seeds, slices of garlic, fenugreek seeds, onions, salt, curry leaves, green chillies and saute it.
To it, add ginger garlic paste, turmeric powder, long slices of tomatoes, coriander powder, red chili powder, tamarind juice, little water, mix it. Later cook it for 5 minutes.
Remove lid, add fish pieces and cook it for another 5 minutes with closed lid.
At last, sprinkle chopped coriander leaves and mix it.
Now Andhra style fish pulusu is ready to serve.

Ingredients
โ†’ All purpose flour 250 Grams.
โ†’ Egg 1 Numbers.
โ†’ Salt 5 Grams.
โ†’ Milk 70 ml.
โ†’ Water 50 ml.
โ†’ Active dry East 7 Grams.
โ†’ Sugar 50 Grams.
โ†’ Butter 15 Grams.
โ†’ Castor sugar & cinnamon powder (to coat) 50 Grams.
Directions
Take a bowl add sugar, dry east, water, milk, salt, egg, mix it till the sugar melts,
Then add all purpose flour, mix it well make in to a dough and kneading for 5 to 7 minutes and add butter again kneading for 3 minutes and rest it for 30 minutes in a warm place, after 30 minutes give knock back and again rest for 30minutes.
Take the dough and with help of rolling pin roll it into ยข inch sheet and cut the doughnuts with doughnut cutter, transfer in to the tray, then rest for 10 to 15 minutes to rise.
Heat oil in a pan and deep fry the doughnuts in a slow flame till brown in colour, take in a serving plate and sprinkle some casting sugar along with cinnamon on it.

โ†’ Dry red chillies 5 Numbers.
โ†’ Cumin seeds 1 Teaspoons.
โ†’ Chopped garlic 5 Numbers.
โ†’ Onion 1 Numbers.
โ†’ Turmeric Pinch.
โ†’ Hing Pinch.
โ†’ Green chillies 5 Numbers.
โ†’ Curry leaves 4 Stricks.
โ†’ Water as required 0.
โ†’ Butter 1 Tablespoons.
โ†’ Fenugreek leaves 1 Cup.
โ†’ Boiled toor dal 1 Cup.
โ†’ Coriander leaves 1 Tablespoons.
โ†’ Tamarind juice 1 Cup.
Directions

1.Take a pan and add oil,mustard seeds,dry red chillies,cumin seeds,

chopped garlic,chopped onion,pinch of turmeric,pinch of hing and

mix it well.

2.Add chopped green chillies,curry leaves and mix it well.

3.Add little bit of water and butter,chopped fenugreek leaves.

4.Saute all these for few mins.

5.Now add boiled toor dal and salt as per taste and mix it well.

6.Add chopped coriander leaves and last lemon juice and mix it well.

7.Saute all these for few mins.

8.Serve in a bowl

THAKKALI KUZHAMBU FOR IDLI DOSAS

Here is an easy to prepare side dish for your good old idli/dosas...

It is indeed a sellout when you are bored of chutneys and sambar and podis.

You need minimum ingredients and very little effort too...

INGREDIENTS

TOMATOES-3
ONIONS-1
GARLIC -FEW PODS
GREEN CHILLY - 3
TAMARIND PUREE -1/4 Tsp
GRATED COCONUT-1/4 Cup
FENUGREEK SEEDS- A pinch
MUSTARD-1/4 Tsp
CUMINSEEDS1/4 Tsp
SAMBAR POWDER-1Tsp
PRESSURE COOKED TOOR DAL -1/2 cup
COCONUT OIL-2
SALT TO TASTE
CURRY LEAVES -FEW

METHOD

Chop onions and tomatoes into small pieces.Crush the garlic pods.
Grind the coconut and chillies with a little water to a smooth paste.
Heat the oil.
Temper the mustard,cumin seeds and fenugreek seeds.
Add the chopped onions and crushed garlic and saute well.
Add the sambar powder and salt to taste.
Now add the tomatoes and tamarind puree and cook till the tomatoes turn soft and mushy.Add enough water and boil well.
Now add the mashed dal and ground coconut paste and bring to a boil.
Add the curry leaves and remove from heat.
Serve hot with any South Indian breakfast.
