Assam tea is a Black tea named after the region of its production, Assam, in India. Assam tea is manufactured specifically from the plant Camellia sinensis var. assamica. This tea, most of which is grown at or near sea level, is known for its body, briskness, malty flavour, and strong, bright colour. Assam teas, or blends containing Assam, are often sold as "breakfast" teas. For instance, Irish breakfast tea, a maltier and stronger breakfast tea, consists of small-sized Assam tea leaves.

The history of tea in China is long and complex, for the Chinese have enjoyed tea for millennia. Scholars hailed the brew as a cure for a variety of ailments; the nobility considered the consumption of good tea as a mark of their status, and the common people simply enjoyed its flavour. In 2016, the discovery of the earliest known physical evidence of tea from the mausoleum of Emperor Jing of Han in Xi'an was announced, indicating that tea from the genus Camellia was drunk by Han Dynasty emperors as early as 2nd century BC.
Some say:- According to legend, tea was first discovered by the legendary Chinese emperor and herbalist, Shennong, in 2737 BCE. It is said that the emperor liked his drinking water boiled before he drank it so it would be clean, so that is what his servants did. One day, on a trip to a distant region, he and his army stopped to rest. A servant began boiling water for him to drink, and a dead leaf from the wild tea bush fell into the water. It turned a brownish color, but it was unnoticed and presented to the emperor anyway. The emperor drank it and found it very refreshing, and cha (tea) came into being.

Tea in America.
Americans had been enjoying the ritual of sharing a cup of tea since even before America was in existence. The American Tea culture first arrived in this New World with the Dutch. The Dutch East India Company was in the business of importing tea even before the English were aware of its existence. By the late 1630’s tea was becoming quite fashionable in the Dutch court. As a result, by the end of the 1650’s, tea culture was avidly being experienced in New Amsterdam, the future New York. By the time the British occupied the city, and renamed it New York, the fashion of culture of tea was firmly ensconced.
The American Tea culture is a part of the history of the United States, as this beverage appeals to all classes and has adapted to the customs of the United States of America. In the Dutch colony of New Amsterdam, now known as New York, tea was served with the best silver strainers, the finest porcelain cups and pots, and wooden tea caddies. Tea became a very popular drink in the colonies, and tea ceremonies were common among all classes. In Salem, MA, tea leaves were boiled to create a bitter brew, then served as a vegetable side dish with butter. By the time of the American Revolution, tea was drunk everywhere from the backwoods to the cities.

Kahwah. Tea of Kashmir. India.

The tea is made by boiling green tea leaves with saffron strands, cinnamon bark, cardamom pods and occasionally Kashmiri roses to add a great aroma. Generally, it is served with sugar or honey and crushed nuts, usually almonds or walnuts. Some varieties are made as an herbal infusion only, without the green tea leaves.
Traditionally, kahwah is prepared in a copper kettle known as a samovar. A samovar consists of a "fire-container" running as a central cavity, in which live coals are placed keeping the tea perpetually hot. Around the fire-container there is a space for water to boil and the tealeaves and other ingredients are mixed with the water. Kahwah may also be made in normal pans and vessels, as modern day urban living may not always permit the use of elaborate samovars.
Kahwah is usually served to guests or as part of a celebration dinner, and saffron (kong) is added to the kahwah for special visitors. It is often served in tiny, shallow cups.
Kahwah is usually served after food (usually lunch) in the North Malabar region of India.
