You are probably already familiar with Kumol Saul, which is famous as Assam’s magical rice that needs no cooking. Also called Bora Saul, the stickiness of the rice is a quality that sets it apart from other varieties. Any special occasion in Assam is incomplete without the serving of this soft & sticky rice.

At Local Foods, we have given our own twist to the Kumol Saul rice.

The bamboo is a naturally growing species of grass with over 90 different varieties and 41 varieties specific to this region only .
The unique tribal culture of the north east is built around the bamboo in all its forms, from food to shelter.
Various states and various tribes in each state use this but in a slightly different way. Dried, fermented or fresh - it is consumed in all forms.
Various dishes are made from the fresh bamboo shoot in the bamboo flowering season and most of it is fermented or dried to be used till the next season. It is said in Nagaland the older the bamboo shoot, the better it tastes. In Naga culture good food is incomplete without bamboo shoot.
From the jungles of Nagaland we have found the bamboo shoot hunters who foray the jungle for the best and most mature shoots which they then ferment in their own unique tribal ways.
This species of bamboo grows only in certain parts of Nagaland and that's why is it's so unique and different .
