"Til Pitha" - a delicious snack to form a duet with black tea, and oh it's GLUTEN-FREE!!! 😃

These rice-flour rolled pancakes are stuffed with ground black sesame seeds mixed in jaggery. 'Til' is Assamese for sesame and 'pitha' means rice cake or pancake. Cooked over a hot griddle, the outer shell of this delicacy is crispy, while the sesame + jaggery filling is mildly sweet and gooey. The shell is made from pounded glutinous/sticky rice called “Bora Saul” which is locally grown in Assam

This snack is served to friends and family as a gesture of love and community, during the Bihu festive season and otherwise as an accompaniment with black tea. This festive season in Assam, try making some of these drool-worthy "Til-Pitha" and serve it with black tea to your friends and family - it is sure to wow them 😄 🤤

Left to itself, a tea plant will grow to be a tall tree, anywhere between 5 and 10 meters. Cultivated tea plants are pruned for ease of hand harvesting and other maintenance work

Pruning is necessary to maintain good plant health and for continual growth of succulent new shoots to make good quality tea. Periodic pruning in intervals of 3-4 years keep the tea bushes in a vegetative phase, encouraging the shoot growth for an optimum harvest. Pruning is one of the most important operations in tea cultivation, with an objective to replace the mature set of maintenance foliage with fresh growth. In this post, the picture is of Rejuvenation Pruning or RP, which has been done to a very old tea section, after around 35-40 years, followed by infilling / in planting of young tea plants in the vacant areas of an RP section

There are many types of pruning heights used in the various stages of the 3-4 year pruning cycle. A normal light pruning is given at around 5 cm above the last pruning mark. So the height of the pruning mark increases after every pruning and after a period of time (3-4 years) we need to reduce the tea bush frame for ease of all works including plucking. Hence a harder prune is required

Honey - a condiment, medicine and one of the best gifts of mother nature. This nurturing golden syrup is a better alternative to sugar. Sugar turns your tea into an SSB (sugar-sweetened beverage) which you might want to avoid in the first place. Why not look at adding honey instead of other sweeteners to your tea?

Adding raw honey to tea can soothe, heal, and revitalize. An excellent anti-oxidant, honey protects the body from inflammation and pairs well with our black and green teas. It contains minerals such as copper, iron, silica, vitamin B, manganese, chlorine, calcium, potassium, sodium, phosphorous, aluminium and magnesium. Just remember not to pour honey into a super-hot cup of tea, this will somewhat burn the honey and reduce its health benefits
