With winter slowly approaching, the occasional cool morning breeze has started reminding me of the Chinese breakfast joints in Kolkata’s Chinatown (Tyangra), where you can find Singhara Chow and Chilli Chicken being served bright and early. There’s pure joy in slurping those steamed noodles - mild in flavour, carrying just a hint of bok choy and garlic. You’ve got to mix in the fiery red chilli sauce they serve on the side to bring it all to life. The texture is spot-on and the entire bowl pairs beautifully with some dry chilli chicken.
Now, why is it called Singhara Chow, you ask? The name comes from the dish’s wontons, which closely resemble singhara (or samosa), a beloved Bengali snack. Locals coined the name to describe this Chinese-Indian creation i.e. noodles served with wontons that look like mini samosas.
I wouldn’t call it a 10/10 must-try breakfast that could dethrone luchi chholar daal for a die hard Bengali like me, but it’s definitely an experience - something unique yet deeply comforting on a crisp winter morning.
P.S. I had this at Kimpou 2 years back. I hope they are still maintaining their quality and taste :)
