When winter approaches we start missing Chef Francis. Before his untimely passing, we were very close. His recipes were very traditional and evoked nostalgia, while I always kept pushing boundaries. One of the items that would bring a twinkle to his eye was a Fish Fry Sandwich. He always wanted that one in soft white bread. We never put it on the menu because he passed away before that.
So here is “Calcutta Francescan”, my homage to Chef Francis Thomas.
Soft, pillowy Japanese Shokupan, hugging a crispy, golden crumb-fried Kolkata-style Bhetki Fish Fry. Melted cheese adds a creamy indulgence, creating a delicious blend of texture and flavor. Comfort food with a refined twist, just the way he described it.
