A four-storey castle made entirely of bread wasn’t on our 2026 bingo card, but that's the beauty of customised orders. From messages exchanged, sketches shared, details discussed to occasionally, sitting around wondering how exactly we’re going to pull it off—a lot happens in the Sivako kitchen for customised orders.

This castle was created as a display piece for a special event, but like every custom order, it began with an idea.

While the final result is always exciting, our favourite part is understanding the story behind each request and finding a way to bring it to life.

For this edition of Know Your Dessert, we asked our chef how Earl Grey works with mango.

Her answer was “balance”.

The Velour entremet pairs an Earl Grey–infused dark chocolate mousse with bright mango flavours, allowing the citrusy notes of the tea blend to cut through the richness of chocolate while complementing the fruit.

Layered with chocolate almond sponge and feuilletine crunch, every element is designed to bring a different texture to the palate.
