Naeng Chae (냉채) is a classic Korean dish whose name literally breaks down as:
“Naeng” (냉) = cold
“Chae” (채) = vegetables / mixed ingredients

Originally, it was a royal court (Hansik) dish, served in elegant settings where presentation mattered just as much as taste. Thinly sliced vegetables, sometimes paired with seafood or meat, were carefully arranged to create a colorful, balanced plate - almost like edible art.
