It was Japanese Ramen night at Saturday Night Diner and at SND Kitchen, we made Japan's most favourite ramen - Tonkotsu Ramen. Since the recipe involved pork, needed to make sure that even the quality of the bones were perfect!! So, for the first time since the inception of Saturday Night Diner, went straight to the abattoir and picked up excellent quality pig trotters for the stock (Tonkotsu) and fresh whole pork legs for the pork meat rolls (Chashu). Getting the best quality pork was the prime concern for the dish and with done right, everything else fell perfectly in place. The Tonkotsu Broth was made the traditional way by cooking the bones for 36 hours for the perfect ramen soup. The Chashu was slow-cooked in Sake for 6 hours and finished with a Teriyaki glaze before slicing to complement the Tonkotsu Ramen. To add in our very own SND twist and give our customers a perfect taste of Japan, we added in Pickled Daikons, Mirin cooked Carrots, Togarashi Roasted Mushrooms, Sancho Pepper Bokchoy, Sesame Soy Wakame, Ajitsuki Tamago (Japanese Soy Eggs), Mirin Soy Shiitake, Asian Wilted Spinach, Mirin Chilli Scallions, Radish Microgreens, Nori Seaweed & Scallions to the Tonkotsu Ramen. The Egg Noodles tossed in Sesame Oil completed the dish.
Was thrilled when the dish turned out just perfect!! Another happy cook moment at SND Kitchen!!

This Saturday, Saturday Night Diner is bringing to Trivandrum a favourite of the Japanese - Tonkotsu Ramen. The noodle soup that was started as a street fast food, ended up being a staple after a mistake by one of the cooks. He ended up boiling the pork bones longer than he was supposed to, that the broth turned milky from the overcooking. This overcooked broth ended up having more flavour and mouthfeel that it became the preferential way of making the dish, henceforth. "Ton" refers to Pork, "Kotsu" refers to Bones and "Ramen" refers to "Pulled Noodles".

Another Italian Night took form at Saturday Night Diner yesterday. Eggplant Parmiggiana with its origins in Southern Italy and Chicken Parmiggiana, an adaptation of the same dish that was created by the Italians, who had moved to America, were the hero's of SND Kitchen last evening. Both were served along with Spaghetti tossed in a Pesto Cream Sauce & our version of Insalata Caprese, the famous Tomato Mozzarella Salad.
The heady flavours of fresh basil and tomato ruled SND Kitchen, making the day and absolutely delicious one!! Thoroughly enjoyed the cook!!😍
