Here is why cold espresso isn't always a good idea
- As the temperature drops oxidation becomes faster. This leads to a cup where bitterness and acidity take over the sweet and delicate notes.
- Ice can also change the cup: it dilutes the espresso and pushes acidity even further.
- This is why espresso often tastes very different from hot to cold
For all these reasons, we usually recommend brewed cold extractions. They preserve the origin’s full character much better.
