Coconut Chocolate Biscuit

Ingredients

• 2 cups flour (plain or cake)
• 1 cup unsalted butter (room temperature)
• 3/4 cup desiccated coconut
• 1 cup white sugar
• 3 Tbsp vegetable oil
• 1/3 cup cocoa powder
• 2 tsp vanilla essence
• 1 egg
• 1/2 tsp baking powder
• 1/4 tsp salt

Directions

1. In a large bowl beat together the butter , sugar , egg ,vanilla and vegetable oil .
2. Then add the dry ingredients (flour, cocoa powder, dedicated coconut, baking powder salt .
Mix until well combined . Use your hands to bring the dough together.
3 .Roll the dough and use a fork to make patterns on the dough . wrap the dough with a cling wrap and let it chill in the refrigerator for at least 40 minutes.
4 .On a slightly floured surface roll the dough into your desired thickness.
5 .Use a round cookie cutter to cut out the dough. Place in a prepared baking tray.
6. Bake in a preheated oven for 10 to 12 minutes at 180 Degrees Celsius.
Do not over bake them !!!
7. After cooling, melt some chocolate and sandwich the biscuits together.
* If you are using salted butter don’t add salt .

Super Easy Pancake Recipe😋
Ingredients :

1 cup flour
Two eggs
½ c water or milk
¼ tsp salt
2 tsp butter, melted

Instructions:

In a bowl, combine flour, butter and eggs. Gradually add milk or water, stirring to consolidate. Add salt and beat to smooth till you get a running consistency

Heat oiled iron pan or skillet on medium-high heat. Pour the batter over the frying pan, using about 1/4 cup for each pancake.

Tilt the dish in a circular motion so that the batter evenly coats the surface.

Cook the pancake for about 2 minutes, until the base is lightly golden and bubbles appear on the dough

Release with a spatula, flip and repeat on opposite side. Serving hot.

Peach Jam

1 cup sugar

2 tablespoons plus 2 teaspoons fresh lemon juice

1/4 teaspoon vanilla extract

2 cloves

4 large ripe peaches, peeled, pitted and coarsely chopped (about 2 pounds)

Directions
Put the sugar, 2 tablespoons of the lemon juice, vanilla and cloves in a heavy, nonreactive skillet. Cook over medium heat, stirring occasionally, until the sugar dissolves, about 5 minutes.

Add the peaches to the skillet and stir once to coat. Raise the heat to medium-high, and bring to a visible simmer. Cook, stirring occasionally, until the mixture is thick and jam-like and the peach pieces are very soft, 15 to 20 minutes, depending on ripeness of the peaches. Check the pan midway, you may need to lower the temperature to medium if the mixture starts to brown.

Crush the peaches with a potato masher, until most of the mixture is smooth and there are only a few chunky pieces left. (The longer the mixture cooks, the thicker the jam will be after it cools.)
Remove from the heat, stir in the remaining 2 teaspoons of lemon juice, and let cool before refrigerating. Cool completely in the refrigerator before using. Discard the cloves before serving. The jam will keep in the refrigerator for up to 2 weeks.

Slow-Cooker Chicken Thighs

Nonstick cooking spray

8 boneless skinless chicken thighs (2 to 2 1/2 pounds total)

1/3 cup honey

1/3 cup ketchup

1/3 cup low-sodium soy sauce

1/2 teaspoon dried oregano

1/4 teaspoon crushed red pepper flakes

6 cloves garlic, peeled and smashed

One 1-inch piece ginger, peeled and minced

2 tablespoons cornstarch, optional

1 teaspoon toasted sesame seeds

Chopped scallions and cooked white rice, for serving

Directions
Special equipment: a 6-quart slow-cooker

Coat the insert of a 6-quart slow cooker with cooking spray and add the chicken thighs. In a glass measuring cup, whisk together the honey, ketchup, soy sauce, oregano, pepper flakes, garlic and ginger and pour over the chicken. Cover and cook on low until the chicken is cooked through and tender, 5 to 6 hours. Turn off the heat, uncover and let rest for about 10 minutes before serving. The chicken and sauce can be served as-is or, for a thicker sauce, remove the chicken and set aside, covered, to keep warm, then turn the slow cooker to high. Stir the cornstarch and 2 tablespoons cold water together until it resembles heavy cream. Pour the mixture into the sauce, cover and cook until the sauce is thick and bubbling, about 30 minutes. (The mixture must come to a boil to activate the starch and thicken the sauce.) Return the chicken back to the sauce and heat the chicken through, about 5 minutes.

Transfer the chicken and sauce to a platter, sprinkle with the sesame seeds and scallions and serve hot with rice.

BAKING SODA
Baking soda is a chemical compound that is activated by acidic ingredients such as buttermilk, vinegar, or lemon juice.

>> To test if baking soda is active, you can mix 1/4 teaspoon of baking soda with 2 teaspoons of vinegar or lemon juice. If the mixture bubbles and fizzes, the baking soda is still active and can be used in your recipe.

BAKING POWDER
Baking powder is a mixture of baking soda, cream of tartar, and sometimes cornstarch. It is a double-acting leavening agent, which means it produces gas bubbles twice - once when it comes in contact with liquid and again when it's exposed to heat in the oven.

>> To test if baking powder is active, you can mix 1/4 teaspoon of baking powder with 1/4 cup of hot water. If the mixture bubbles up immediately, the baking powder is still active and can be used in your recipe.

YEAST
Yeast is a living organism that ferments and produces carbon dioxide gas, which makes bread rise. There are two main types of yeast used in baking - active dry yeast and instant yeast.

>> To test if yeast is active, you can mix 1 teaspoon of sugar with 1/2 cup of warm water and 2 1/4 teaspoons of yeast. If the mixture foams and bubbles after a few minutes, the yeast is still active and can be used in your recipe. If there is no foam or bubbles, the yeast may be dead and you will need to replace it with fresh yeast.

BBQ Chicken Marinade

2/3 cup ketchup

1 tablespoon light brown sugar

1 tablespoon apple cider vinegar

1 tablespoon Worcestershire sauce

1 teaspoon ground cumin

1 teaspoon paprika

1 clove garlic, grated

Kosher salt and freshly ground black pepper

4 boneless skinless chicken breasts or 8 boneless skinless thighs (about 1 1/2 pounds)

Directions
For the marinade: Combine the ketchup, sugar, vinegar, Worcestershire, cumin, paprika, garlic, 1/2 teaspoon salt and a few turns of pepper in a large resealable plastic bag. Add 4 boneless skinless chicken breasts or 8 boneless skinless thighs (about 1 1/2 pounds), squeeze out the air, seal tightly and massage gently to coat the chicken with marinade. Refrigerate for 2 hours or freeze up to 1 month; defrost in the refrigerator overnight before cooking.

To cook: Remove the chicken from the bag and grill over indirect heat, covered, until cooked through, lightly charred and an instant-read thermometer registers 165 degrees F, 20 to 25 minutes.

HOW TO MAKE CHICKEN PIZZA

RECIPES FOR DOUGH

* 2 cups of all purpose flour
* 2 tablespoons of sugar
* 1 tablespoon of instant yeast
* ½ tablespoon of salt
* ½ cup of water
* 2 tablespoons of vegetable oil
TOPPINGS
* Chicken
* Seasoning cubes
* Ginger powder
* Chili pepper
* Salt
* Garlic powder
* Pizza sauce
*Yellow & red bell pepper
* Chesse
PROCEDURES
* In a mixing bowl, combine the flour, sugar, instant yeast, salt and whisk. Add the water and vegetable oil. Mix with a spatula to form a dough.
* Transfer the dough to a floured surface and knead until it becomes stretchy. Place in a greased bowl and cover until it doubles in size.
* Cut the chicken into smaller sizes, season with salt, ginger and garlic powder, chilli pepper and seasoning. Make sure the ingredients touches all sides of the chicken then allow to marinade for 10mins. Fry and set aside.
* Knock the air out of the dough and roll. Place the rolled dough into a pizza pan. Create some openings in the dough using a fork and place in a preheated oven of 175°c for 5-7mins.
* Brush some pizza sauce on the surface of the dough, add the sweet peppers (red & yellow bell pepper), chicken, cheese. Repeat this process twice. Brush some vegetable oil around the dough.
* Bake in a preheated oven of 175°c for 25-30mins.

How to make Avocado oil

Ingredient: only RIPE pear

Procedures

Step 1
Cut from middle and remove the avocado pear in the center.

Step2

Peel off the avocado skin, put the butter in a bowl and smash smoothly or use blender to blend it.

Step3
After smashing or blending it , pour in a plate or tray. And spread it well on the surface of the tray .

Step4
Sun dry it for 3 days or use oven to dry it in a very low heat.

Step5
After drying it scrape it and use sieve net to squeeze out the oil.

Step6
After squeezing out the oil , sieve it for some time and your Avocado oil is ready
Store in a clean bottle and cover it well.

HOW TO COOK STIR FRY SPAGHETTI
INGREDIENTS
* Spaghetti
* Shrimps
* Chicken (cut into smaller sizes)
* Red bell pepper (diced)
* Green bell pepper (diced)
* Carrots (diced)
* Green beans (diced)
* Onion (diced)
* Seasoning cubes
* Vegetable oil
* Salt
* Powdered ginger
* Powdered garlic
* Curry powder
* Fresh pepper (blended)
* Spring onion
* Grounded pepper
PREPARATIONS
* Season the shrimps with ginger, garlic and some seasoning cubes and keep aside.
* Season the chicken parts with garlic, ginger, grounded pepper, curry, seasoning cubes and a pinch of salt and keep aside for 20min to marinade.
* Fry the shrimps and chicken parts on medium heat until it's done and set aside.
* Before proceeding to fry the veggies, cook the spaghetti with some salt and oil so it doesn't stick until it's soft. Drain using a Sieve and set aside.
* In the same pan used in frying your chicken, add the onion and give it a quick fry, add the garlic, ginger, blended pepper and stir.
*Add the carrots, bell peppers, green beans and fry for 3min. Add some seasoning cubes and salt.
*Add the shrimps, chicken and stir.
* Finally add the spaghetti and give it a good stir until everything is properly mixed.
* Garnish with some spring onion and serve.

HOW TO MAKE TOMATO KETCHUP
INGREDIENTS;
1.5kg fresh tomatoes
1/2 cup of brown sugar
1 & half cup of vinegar
1/2 teaspoon chilli Powder
Salt to taste
500ml of water

Procedures;

* Roughly cut the tomatoes, put in a pot with a little water and cook for 3-4 minutes.
* Allow the pot to subside.
* Once done, blend it into a very fine puree & run it through the mesh.
* Cook the puree on moderate heat, add brown sugar, white vinegar, chilli powder and salt.
* Let it continue cooking for 15-20 minutes until it becomes thick.
* Put a few drops on a clean plate, tilt it & if it's not runny then the ketchup is ready.
* Put the ketchup into a squeeze bottle when it's cool.
Cover & it's ready for use..
