The sausage and friarielli pizza is one of the most classic and famous of Neapolitan cuisine.
Sausage and broccoli are cooked separately and then combined to take flavor and taste together.
Broccoli are the newly developed inflorescences of turnip greens, which still wet with water are fried in oil together with garlic and chilli.
Their flavor is decidedly bitter.
They are mostly grown in the inland areas of Campania and only in this region are they called "friarielli", a name that derives from the Neapolitan "frijere", which means to fry.
In Neapolitan cuisine they are traditionally paired with sausage, whose flavor mitigates the bitterness of broccoli.
