Yesterday, I had breakfast with a friend.

She smiled and said, “You have competition with your Pork Belly.”

I smiled back and said, “That’s okay.”

The truth is, I’ve never built Mangan to compete with anyone.

In fact, I often recommend and promote other Filipino food businesses around town. I’d much rather see one of us earn the business than spend our time putting each other down.

There’s enough room for all of us to thrive.

Every cook has their own style, their own recipes, and the dishes they pour their heart into. That’s what makes food beautiful. No two kitchens are exactly the same, and they shouldn’t be.

As for us, we’ll simply keep doing what we love.

We’ll continue preparing every food box with care, using quality ingredients, refining our recipes, and serving every customer as if they’re family.

Our goal has never been to be better than someone else.

Our goal is to be better than we were yesterday.

In life, there are only a handful of people who leave a lasting mark on your heart—people whose kindness, humility, and example quietly inspire you to become a better person.

Ambassador Flerida Mayo has been that person for me, even without her knowing.

Thank you for believing in people, for serving our Filipino community in Cambodia with so much compassion, and for making every person you met feel seen and valued. Your kindness was never performative; it was simply who you are.

I will always be grateful for the opportunities you gave me and for the trust you placed in Mangan – Belle's Kitchen. Cooking for you, your family, and the Philippine Embassy has been one of the greatest honors of my journey.

Some gifts don’t come in fancy boxes.

They come wrapped in banana leaves.
Tied with simple twine.
Filled with recipes handed down through generations.

Every package we prepare carries more than food. It carries time, tradition, and the hope that every meal brings someone a little closer to home.

One little detail we’re proud of: our longanisa is intentionally vacuum-sealed in smaller portions. It’s easier to thaw, easier to divide, and lets you cook only what you need while keeping the rest fresh for another meal.

Sometimes, it’s the smallest details that make the biggest difference.

❤️ Never underestimate the small beginnings.

I was putting the finishing touches on the investors' deck I've been working on for months when these photos suddenly appeared in my gallery.

They stopped me in my tracks.

These photos were taken more than 20 years ago in Mazatlán, Mexico.

Back then, I was simply cooking lunch for our team.

There was no restaurant.
No business plan.
No investor presentation.
No logo.
No dream of one day owning a kitchen.

I was just doing what I loved—preparing meals that brought people together.

As I looked at these old photos, I couldn't help but smile.

While I was finishing a presentation about the future of Mangan – Belle's Kitchen, God gently reminded me where it all began.

The long hours in the kitchen...
The simple meals...
The joy of serving others...

None of it was wasted.

Every meal I cooked.
Every person I served.
Every lesson I learned.

God was already preparing me for a purpose I couldn't yet see.

Today, people often see the finished chapter—the catering events, the collaborations, the milestones, and Mangan – Belle's Kitchen.

But every meaningful journey begins with ordinary moments that almost no one notices.

If you're in a season where your work feels small, unseen, or insignificant, don't lose heart.

Keep showing up.
Keep being open to learning.
Keep serving.
Keep being faithful with what God has placed in your hands.

Because one day, you'll look back and realize that what felt ordinary was actually preparing you for something extraordinary.

God has a beautiful way of connecting the dots.

Twenty years ago, I was simply cooking lunch for a small team in Mexico.

Last night, I had the privilege of being welcomed back into the kitchen at Koulen Central Mall and Hotel for the second time.

The first time I had the opportunity to work with their team, we prepared a private dinner for General Tea Seiha and his family. Being invited back is something I don’t take for granted. In this field, trust is earned through consistency, teamwork, and showing up with excellence every single time.

I’m grateful to have the opportunity to work alongside Executive Chef Chanty and her incredible team. Watching her lead such a talented brigade with calmness, humility, and confidence was inspiring.

One of the things I love most about this journey is that every kitchen has something to teach you. Whether you’re leading your own business or stepping into someone else’s kitchen, there is always something new to learn, another technique to refine, and another perspective to appreciate.

As I continue building Mangan – Belle’s Kitchen, experiences like these remind me that growth comes from staying curious, serving with excellence, and never believing you’ve learned it all.

To Chef Chanty and the entire team at Koulen Central Mall and Hotel—thank you for welcoming me back into your kitchen, for your generosity, and for allowing me to cook alongside such passionate professionals.

I left with new ideas, renewed inspiration, and an even deeper love for this craft.

When we started Mangan – Belle’s Kitchen, we made a simple promise to ourselves:

Cook food we’d be proud to serve our own family.

No shortcuts.
No artificial flavors.
Just fresh ingredients, time, and a lot of love.

So when a customer takes the time to send a message like this, it reminds us why we do what we do.

“So good! I’ll order the lechon next time.”

“The adobo is exactly the type I like.”

“The sisig was so good… and the Java rice was really, really good!”

Then, after I admitted that I secretly added extra Sisig because I didn’t want her to run out, she laughed and said,

“Kaya pala! Ang dami, girl! Excited to try more.” 😂❤️

It’s little conversations like these that make our long days in the kitchen worth it.

To everyone who has trusted us with your family dinners, celebrations, or even an ordinary Friday night meal—thank you.

❤️ Some days don’t go according to plan… and that’s okay.

I woke up to a message from the assistant of a high-ranking government official asking if we could prepare a last-minute lunch.

Normally, I don’t accept last-minute orders.

Then came the 🥹 sticker… followed by these simple words:

“I believe in you, B**g. You can.”

How do you say no to that?

So I jumped out of bed, drove straight to my trusted butcher, picked up the freshest pork I could find, and headed back to the kitchen.

The chopping, roasting, seasoning, and cooking began.

Then, a little later, the plans changed.

Lunch became dinner.

Which, thankfully, gave us a little more time to do what we love most—cook everything slowly, carefully, and with the attention every meal deserves.

Tonight’s menu:
🥓 Pork Belly Lechon
🌶️ Crispy Pork Sisig

People often think cooking is just about following a recipe.

It isn’t.

It’s about showing up when someone places their trust in you. It’s about honoring that trust by giving every meal your very best, no matter how busy the day becomes.

As I was preparing the Sisig today, I remembered they had ordered it once before. Quietly, I wondered if they had truly enjoyed it. As cooks, we rarely get to see the expression on someone’s face after that first bite. Sometimes, all we can do is hope that the food speaks for itself.

Then I smiled.

God has a beautiful way of answering our prayers—and even our silent questions.

Because they wouldn’t have ordered it again if they didn’t love it the first time.

For me, that second order was more than another sale. It was a quiet reminder that when we faithfully do our work with excellence, love, and integrity, people remember.

Now… back to the kitchen. Dinner won’t cook itself. ❤️

Something is magical about eating with your bare hands.

It slows you down.

It invites conversation.

It reminds us that the best meals aren’t measured by fancy table settings, but by the people gathered around them.

Long before smartphones and busy schedules, families came together around banana leaves, sharing food, stories, laughter, and gratitude. It’s a beautiful tradition that reminds us that food has always been about connection.
