Running this business looks different every day. We finally had nice weather so I installed a new trailer electrical hookup and trailer brake controller on my truck. We're expanding our distribution down into South Carolina and Georgia, and this new hookup will allow me to tow a bigger enclosed trailer full of burritos and products for partner brands.

We spent the last two weeks traveling around Japan eating great food on almost every corner. 7-11s are huge here. They have an amazing assortment of food and drinks. Some even have hot water to heat up instant ramen and chairs to eat at - just don't take too long because someone else needs your chair.

I noticed burritos at 7-11 and had to try one. I went with the Ham and Cheese instead of the Bacon, Spicy Po***ck Roe, and Carbonara Burrito. Not great, not bad, but Japan has been incredible.

Food manufacturing has a lot of risk and regulation. I'm prepping samples of our Salsa Verde and Salsa Macha to send to the state lab today. Once we get the results and take an acidified Foods course, we'll be able to wholesale these salsas. I'm grateful that we have such strict regulation - it keeps us all safe and healthy - but it is a lot of work for a small company.

My science education at helped prepare me for this work. I love Warren Wilson and am so thankful for my time there.
