and I’m still trying to process it.

Every day at 9:00 AM, we don’t just start a cooking class…
we begin a journey through time.

At Gaby’s Restaurant in Puerto Vallarta, I welcome my guests not just as a chef… but as a storyteller.

Before we cook, before we walk to the market…
we sit down together and I share something very personal:

📖 The story of my family.

My grandparents arrived here in 1928, coming from San Sebastián del Oeste,
when Puerto Vallarta was nothing more than a small fishing village.

With just 50 pesos, they bought the land where Gaby’s stands today.

For years, they lived in a town built by:
🌊 Fishermen
🧂 Sea salt producers

That’s why people from Vallarta are known as “Pata Salada” — salty feet.

This is not just history…
👉 this is identity
👉 this is roots
👉 this is real Mexico

Over 100 years later, I have the honor to share that legacy with every guest who walks through our doors.

So when you join us…

We started outside, walking through the beautiful cobblestone streets, connecting with the culture, the history, and the real soul of Mexico 🇲🇽
