ever since we started roasting and got more involved in the process of buying green beans, we started looking deeper into what we wanted to serve in the shop. the opportunity to feature each origin, each character, and the stories behind each producer.

so here's our new coffee for this month:
lost origin coffee series: morgan estate

lost origin coffee is a processing lab in panama, founded by two craft brewers who asked a simple question: what if we applied brewery science to coffee using yeast inoculation and controlled fermentation. they push each coffee cherry far beyond conventional processing, unlocking its potential through intentional fermentation.

morgan estate sits at 1,700–1,780 meters in a secluded valley in boquete, steep-sided, mist-covered, with a river running through its middle. the farm is owned by panamanian author juan david morgan and managed by jamison savage, whose obsession with detail is evident in every step. this is a geisha grown and handled with quiet, unhurried precision.

a coffee that is elegant and sweet, while also reflecting the importance of moving with intention.

we're not going to pretend 2026 has been smooth sailing. it's been a six months of learning: we launched our web store, stepped into a few competitions, spent days and nights in training, ran countless roasts and r&ds, had our very first coffee booth. ups and downs along the way, absolutely, but it was memorable and fun.

every single one of those pushed us to be more intentional about the coffee we put in front of you. thank you for being part of what stellar is becoming. here's to the second half.

to everyone who stopped by for a cup, purchased a bag or two, shared kind words, asked about our coffees, and believed in what we’re building, thank you. we started our roastery with a simple approach: to share coffees that we genuinely love. it’s hard to explain how special it feels to see people connect with something you’ve worked on quietly for a while. this is only the beginning, but we’ll always remember this first booth.
