Vandaag laat ik je een van de gerechten zien die mijn keuken het beste vertegenwoordigt: Polpo in un Tagliolino.

Een gerecht waarin alles draait om de pure smaak van octopus.

Onze verse tagliolini worden omhuld met een intense saus, gemaakt van een reductie van het eigen kookvocht van de octopus, die langzaam op lage temperatuur is gegaard. De saus wordt verrijkt met aromatische kruiden, citroenrasp, zoete confit-tomaatjes en krokant geroosterd broodkruim.

Om iedere nuance van de octopus tot zijn recht te laten komen, serveren we hem op twee manieren: langzaam gegaard voor een boterzachte textuur รฉn krokant gefrituurd voor een heerlijk contrast.

Een verfijnd gerecht met een intense smaak, speciaal voor liefhebbers van authentieke Siciliaanse smaken en de echte smaak van de zee.

Today Iโ€™d like to introduce one of the dishes that best represents my cuisine: Polpo in un Tagliolino.

A dish entirely dedicated to the true flavour of octopus.

Our fresh handmade tagliolini are coated in an intensely rich sauce made from a reduction of the octopusโ€™ own cooking juices after being slow-cooked at low temperature. Itโ€™s finished with aromatic herbs, fresh lemon zest, sweet confit tomatoes and toasted breadcrumbs.

To highlight every side of the octopus, we serve it in two different textures: slow-cooked until incredibly tender and lightly fried to create a delicious crispy contrast.

An elegant dish with bold Mediterranean flavours, created for those who appreciate authentic Sicilian cuisine and the true taste of the sea.
