EVA!

The sad moment we all knew was coming…

Last Saturday we said goodbye to our dearest Eva. A special moment for our most special team member (so far). Eva joined Merijn and Figo in December 2013 straight away with the first pop-up Repéré, stayed with us during Foyer in Felix Meritis and helped us start up Choux from the very beginning. 

Eva became the general manager quickly and developed her own style of hospitality, which, to this day, still is the benchmark for our fantastic front-of-house team. Her outspoken style of service can be described best as a combination of warmth, humor, sincerity, and, above all, a very personal touch. In essence, the style of service we want to deliver to our guests, day after day. We can’t imagine a Choux without a smiling Eva as our welcoming host, but unfortunately all good things come to an end.

For Eva, a new horizon opened up, an opportunity she couldn’t resist. Together with Figo and their son Tos, she’ll be moving to in Kollum. They’ll move into an ancient farmhouse with a small campsite, an old orchard and an amazing garden. It’s the place where they got married back in 2023.

Eva, there are no words to share our gratitude. Choux would have never been the same without your influence and we’re going to miss you dearly. All the best with the bright future lying ahead of you; your light will shine bright anyhow!

We still can’t believe what happened to us this year, but we’re so incredibly proud of our amazing team and everyone else surrounding us.
Although 2026 can’t bring us the same when it comes to recognition by the establishment, we’ll be here for all of you to give you all we’ve got.
Here’s to another incredible year, full of joy, outstanding food, intriguing wines and hopefully a little bit more world peace…

We consider this the icing on the cake after the experiencing so much love and recognition during our wonderful 10 years Choux anniversary week.
Needless to say that were insanely proud of all our (former) team members, suppliers and of course all of our guests! We had a blast, and hopefully on to ten more years…

What a milestone! Choux is celebrating it’s 10th anniversary this May, and we would like to celebrate this with you. From the 19th till the 24th of May, we are organizing a real party week in which we will look back on 10 years of Choux. Every evening will be a special evening in which we will celebrate Choux.

We have a special position opening in our Front-of-House team! From June onwards we’ll be looking for a new sommelier to join us. After almost 6 years, our dear sommelier .ou is leaving us to pursuit a new path. We’re very sad that Philip will leave us, as he’s a very important factor, not only in selecting wines, managing our 6000+ bottles cellar, but also creating our non-alcoholic pairings. Therefore, we are looking for the right sommelier to come and support as Team-Sommelier and join our amazing team!

What are we looking for?

First of all we’re looking for an awesome human being. Next to that, we like you to have or be at least the following:
- Natural wine enthousiast;
- Wine and fermentation knowledge needed for this position;
- Restaurant experience;
- Socially adapt;
- Used to work in bigger teams;
- Organizational skills;
- EU-citizenship;
- Awareness of the housing situation in Amsterdam and surroundings.

We have a spot opening for an energetic sous-chef from February onwards. After almost 6 years, our dear chef is leaving us to pursuit a new path, and will succeed him as the captain of the ship. Therefore, we are looking for the right sous-chef to come and support Dirk and join our amazing team!

What are we looking for?
