We look back on an unforgettable evening this week at !
For this event, we joined forces with .amsterdam* to put the Fukushima region on the map and showcase its incredible richness.
It’s been 15 years since the devastating earthquake in Japan, and the region is bouncing back with even more beautiful food: so it felt only natural for our two restaurants to partner and showcase some of these exceptional ingredients.
The evening featured a sake masterclass by .akos (Okura sommelier) and our own , paired with extraordinary dishes by Yamazato’s brand-new Executive Chef and Hokkai Executive Chef .
For both Menno and Kuni, who started their careers at Okura, it truly felt like homecoming. For everyone else: it was simply a celebration!
Some of the highlights we served:
✨ Steamed sea bream with soba noodles, paired with a pure Junmai Ginjo boasting crisp melon aromas.
✨ Maguro katsu with crispy seaweed oil, matched with an umami-rich Junmai.
✨ Charcoal-grilled O-toro nigiri with lightly warmed Yamahai: combination that left everyone speechless.
So many incredible flavors come from this region. We encourage everyone to visit Fukushima on your next trip to Japan! It’s only 1.5 hours by train from Tokyo, offering breathtaking nature, outstanding food, and exceptional sake.
