Our friend Takamura-san has spent decades growing one of the world’s most challenging crops: wasabi.

Real wasabi has nothing to do with the pungent, artificially green paste from a tube. It is rich, earthy and creamy, with a gentle kick that is both sharp and delicate.
That is what makes it so special.

Muchísimas gracias to the wonderful team at for two exhilarating nights together in the kitchen.

Flavors collided, colors burst to life, and Argentinian Chardonnay flowed alongside Japanese mizumoto sake. It was a true feast.

Both chefs expressed their cultural roots through dishes that beautifully merged traditions: sashimi cocktail with leche de tigre, anticuchera o-toro nigiri, and fenugreek based katsu curry.

This is what culinary exchange is all about: honoring different backgrounds while creating something entirely new together.

(Nazka) and (Hokkai Kitchen) are coming together to serve a very special four-hands dinner.

You will discover reinterpreted classics such as our sashimi cocktail Peruvian-style, alongside new combinations like curry with secreto ibérico katsu.

The most exciting things happen at the crossroads where different worlds meet and elevate one another. Nowhere is this more true than in the culinary world. Sometimes, these encounters create something new entirely, like when Peru met Japan, giving rise to the vibrant Nikkei cuisine.

This spirit forms the foundation of the dinner, yet we do not stop there. As sommeliers and will pair each dish with handpicked South-American wines and Japanese sakes to take this culinary dialogue into a whole other dimension.

Seasonal dishes on the menu!

First: Kuni’s take on erwtensoep. In the Netherlands it’s an unmistakable winter dish, but reimagined through a Japanese lens, the season shifts to spring.

A dashi broth with katsuobushi and charcoal-grilled shiitake, a drop of porcini buckwheat soy sauce from with white asparagus on top.

Second: Aubergine, just started its season, charcoal-grilled, then soaked in dashi, becoming deliciously juicy.
Finished with yuzu buri miso.

At the recent Professional sushi competition for non Japanese chefs , two chefs from Team Hakkai took part.

Jan took first place, and Krystian came in third. And this August, Jan will represent Benelux at the World Sushi Cup in Japan.

These achievements are no coincidence.
Both chefs committed themselves fully, training on their days off to refine their skills and push their limits.

On Sunday 29 March, we’re rolling up the doors of our factory hall in IJmuiden for an open day from 13:00 to 17:00.

This edition is dedicated to the ultimate staple of Japanese cuisine: rice. So simple. So everyday. Yet when you truly taste exceptional Japanese rice, everything changes.

Of course, it wouldn’t be an open day without live music, the filleting of fresh tuna, a masterclass by sake sommelier Menno Tol on saka-mai (sake rice), and plenty of tastings and Japanese delicacies.

Menno is not only the first Dutch Master Sake Sommelier. He is someone who actively reshapes how sake is understood in the Netherlands. By creating thoughtful food pairings, educating sommeliers, and guiding others into the world of sake, he brings this craft closer to us every day.

We look back on an unforgettable evening this week at !

For this event, we joined forces with .amsterdam* to put the Fukushima region on the map and showcase its incredible richness.

It’s been 15 years since the devastating earthquake in Japan, and the region is bouncing back with even more beautiful food: so it felt only natural for our two restaurants to partner and showcase some of these exceptional ingredients.

The evening featured a sake masterclass by .akos (Okura sommelier) and our own , paired with extraordinary dishes by Yamazato’s brand-new Executive Chef and Hokkai Executive Chef .

For both Menno and Kuni, who started their careers at Okura, it truly felt like homecoming. For everyone else: it was simply a celebration!

Some of the highlights we served:
✨ Steamed sea bream with soba noodles, paired with a pure Junmai Ginjo boasting crisp melon aromas.
✨ Maguro katsu with crispy seaweed oil, matched with an umami-rich Junmai.
✨ Charcoal-grilled O-toro nigiri with lightly warmed Yamahai: combination that left everyone speechless.

So many incredible flavors come from this region. We encourage everyone to visit Fukushima on your next trip to Japan! It’s only 1.5 hours by train from Tokyo, offering breathtaking nature, outstanding food, and exceptional sake.
