A Sichuan classic with no fish, just bold flavour — tender eggplant in a spicy, sweet, sour, savoury sauce with minced chicken or soybean chunks, served over rice and finished with spring onions.

🔥 This Week at Umami: Korean Comfort Line-Up

🍳 Kimchi Fried Rice �A Korean staple made by stir-frying fermented kimchi with rice, then seasoning it with gochujang, kimchi juice and soy sauce for that perfect spicy, tangy, savoury, funky flavour profile.
�Topped with a fried egg, spring onion and sesame seeds.
�Served with two banchans:�• Sigeumchi-namul (spinach)�• Gamja salad (Korean potato salad)

🧀 Korean Spicy Cheesy Noodles�We’re taking our famous Korean Fried Chicken sauce and turning it into a cheesy noodle dish for the ultimate comfort bowl.
�Wheat noodles tossed in a spicy Korean-style sauce with onion, cabbage and carrot, then topped with gooey melted cheese and garnished with spring onion.

Options:�• Chicken: Boneless chicken stir-fried in spicy sauce

🍝 This Week at Umami: Italian Comfort Done Our Way 🇮🇹

We’re bringing back two classic favourites — one timeless, one nostalgic — both made completely from scratch in true Umami style.

🍅 Spaghetti Bolognese�A global comfort classic featuring long, slurp-worthy spaghetti coated in a rich, slow-simmered tomato and meat sauce. Our Bolognese is made from scratch with garlic, onion, carrots and tomatoes cooked down with ground chicken for maximum flavour.
�For our plant-based friends, we’re swapping the chicken for soybean chunks and button mushrooms — hearty, savoury and fully meat-free.
�Served with fresh basil, a sprinkle of chilli flakes and a refreshing side salad with our in-house dressing. Simple, homely and deeply satisfying.

🌿 Sandi’s Signature Boscaiola�Back by popular demand! First introduced when Umami Memoir started in 2021, our Boscaiola is a creamy Italian-Australian comfort dish made with pasta tossed in a rich, velvety house-made sauce with mushrooms, bacon and parmesan.

This Week at Umami: Thai Comfort, Two Ways 🇹🇭✨

We’re bringing you two Thai favourites — one warm and creamy, the other bright and tropical — both packed with flavour and full of soul.

🔥 Creamy Tom Yum Soup �A rich, hot-and-sour Thai soup made creamy with coconut milk and elevated with roasted chilli paste for a fuller, deeper flavour.

Expect a beautiful balance of spicy, sour, and creamy with vegetables like zucchini, cauliflower and oyster mushrooms simmered into the broth.�
Choose your protein: Prawns, Chicken or Button Mushrooms.�Served with rice and garnished with fresh coriander.

🍍 Khao Pad Sapporod (Pineapple Fried Rice)
A savoury–slightly sweet fried rice dish featuring pineapple, egg, capsicum and onion, stir-fried to perfection and finished with crispy cashews and coriander.

Protein options include Prawns, Chicken, or Mushroom.

The prawn/chicken versions are seasoned with fish sauce + soy, while the vegan/vegetarian version uses soy sauce only — and the egg is omitted for plant-based diners.

Lion’s Head Meatball Noodle Soup�A beloved Chinese dish featuring giant, tender chicken meatballs simmered in a light, savoury broth with napa cabbage, served over clear glass noodles.
�The meatballs get their name from their large size, resembling a lion’s head, while the surrounding cabbage represents its mane.

Our broth is infused with simple aromatics and goji berries for natural sweetness and an antioxidant boost. Each bowl comes with carrot, shiitake mushrooms, napa cabbage and is finished with fried shallots and fresh coriander.

🌱 Plant-Based Version:�Meatballs made with tofu, mushroom, carrot and cashews, served in a fragrant vegetable broth — hearty, wholesome and completely vegan.

Taiwanese Braised Protein Bao Buns�You loved our Taiwanese Noodle Soup last time, so we’re taking that same flavour profile and turning it into a bao experience.

Choose from Buff, Chicken, or Mushroom, all braised in a rich, savoury broth simmered with aromatics, star anise, cinnamon, doubanjiang and tomatoes for a gentle tang.
�The shredded protein is packed into soft, pillowy bao buns, topped with fresh shredded carrot and finished with coriander and crispy fried shallots.

Comforting, warm and full of soul — perfect for this cold weather.

Kung Pao Chicken

A Chinese classic — marinated chicken, toasted peanuts and a glossy sweet, sour, spicy chilli sauce stir-fried to perfection.

Originating from Sichuan, the traditional version features Sichuan peppercorns for that iconic numbing mala kick 🌶️⚡️

Expect a bold balance of sweet, sour, savoury and spicy, built from soy sauce, vinegar, aromatics and a light cornstarch-thickened sauce, with garlic, ginger and spring onion bringing everything together.

🌱 Plant-Based Option:�Made with oyster mushrooms — fully vegan, just as flavourful 💛

Lemon-glazed Chicken Wings
Crispy, golden and coated in a sweet, tangy, savoury lemon glaze that hits all the right notes.

The wings are seasoned, fried until perfectly crunchy, then tossed in a sticky sauce made with fresh lemon juice & zest, honey, garlic and soy sauce for that irresistible umami kick.

Finished with spring onions, sesame seeds and lemon slices, they’re crispy on the outside, juicy inside and bursting with bright flavour.

🥬 Kimchi Pre-Orders Are Now Open! 🇰🇷

We’re making both regular and vegan kimchi - one batch only for the rest of 2026.
�Choose from napa cabbage or radish — each seasoned with our house blend of gochugaru, gochujang, garlic, ginger and apples for that spicy, tangy, savoury kick.

Our regular kimchi uses fish sauce, while our vegan kimchi is made with our own house-fermented vegan “fish sauce” and vegetable broth for deep umami — fully plant-based and just as delicious.

Available in 350g or 1200g jars.
For the avid kimchi consumers, we have bigger jars available - please enquire within.

Filipino Adobo�One of the Philippines’ most famous dishes — chicken braised in vinegar, soy sauce, garlic, black peppercorns and bay leaves until tender and rich.
�The result is a beautiful balance of savoury, tangy, slightly sweet and aromatic flavours, traditionally served over rice and loved for its simplicity and depth.

🌱 Plant-Based Version: Tofu + oyster mushrooms

Filipino Pancit Bihon (Umami Twist)�A beloved Filipino stir-fried noodle dish traditionally made with thin rice noodles, savoury chicken and colourful veggies like carrot, cabbage, celery and snow peas.

We’re giving it a twist by using spaghetti for a sturdier bite and better texture — no broken vermicelli here. 😉�
Seasoned with a savoury soy-based sauce, garlic, onion and classic Filipino flavours, this dish is often served at celebrations as a symbol of long life.

🍜 This Week at Umami 🇹🇭

We’re celebrating Thai comfort food — two iconic dishes, both bold, aromatic and full of soul.

🍚 Khao Man G*i 
A beloved Thai dish with Chinese roots — poached chicken and aromatic rice, served with a flavourful dipping sauce, fresh cucumber and tomato and a soothing bowl of soup on the side. Every bite brings together tender chicken, fragrant rice, a zesty, tangy sauce and an aromatic broth, topped with spring onion oil and fresh coriander.

🌱 Veg Version:
Made with king oyster mushroom and tofu curd skin to mimic ‘chicken’ in a rich mushroom-based broth — comforting, hearty and fully plant-based.

✨ Limited Edition Alert: We can only accept 45 orders this week — one special ingredient in the sauce is in short supply!

🔥 Pad Krapow 
A fiery Thai favourite — stir-fried garlic, chillies and holy basil tossed with your choice of protein, known for its spicy, savoury, and slightly sweet balance 🌶️

🥢 Char Siu Meatball Sliders (Bao Edition) ✨

This week we’re taking the idea of a slider and giving it an Umami twist.

Our Char Siu–glazed Chicken Meatballs are served on a bao bun base, topped with pickled carrot & radish and fresh coriander for the perfect balance of sweet, savoury and bright.

🌿 Vegetarian Option:
Char Siu–glazed tofu squares, also served on a bao bun bottom with the same crunchy pickles and coriander.

Soft. Sticky. Fresh.

A little messy. A lot delicious.
