……urad, rajma and kidney beans soaked for eight hours, using the charcoal embers from my tandoor. This process enables me to achieve that special slow-cooked flavour. The secret, this process releases its natural butter oils, instrumental in our House Black Dhal. A creamy, rustic, heart warming and flavoursome lentil curry.

When with family, I enjoyed with our Paratha Naan cooked on the walls of our clay oven.

Fresh South Island Salmon. Smoked over charcoal with a light but settle rub to really do justice to the product. Meena’s Ingredient list:

Salmon Rub

- Mustard Oil
- Unsweetened Natural Yoghurt
- Fresh lemon juice
- Turmeric Powder
- Garam Masala
- Chilli Powder
- Coriander Powder
- Ground Cumin
- Pink Salt
- Brown Pepper
