The origins of Dear Deer date back many years. The owner of Dear Deer, Yukichi Shikano, comes from a long line of coffee connoisseurs, starting with his Grand Uncle, Morikyo Itomitsu, who was the founder of the well-known Japanese coffee brand ‘Kalita’. lity coffee has remained within Yukichi’s family ever since. Yukichi’s father, opened his own coffee shop called Fukumame in Tokyo, Japan back in 2007 and it has been so successful, it is still there today sharing the passion for quality coffee that Morikyo Itomitsu installed in his family and the Kalita brand. Yukichi continued with his family tradition and in 2018 opened his first Dear Deer café and roasting bar in Onehunga, Auckland, New Zealand, bringing that Japanese coffee culture to New Zealand. Dear Deer’s name originates from the owner Yukichi Shikano’s name. In Japanese, Shikano translates to ‘Deer Field’ with ‘Shika’ translating to deer and ‘No’ translating to field. The name Dear Deer appears like it is a play on two English words that sound the same, but it is a lot more than that. The name pays homage to the Shikano family as if Yukichi is addressing those that have come before him by saying Dear Deer, or Dear Shikano. Staying within his Japanese heritage, Yukichi also designed the Dear Deer logo with his culture in mind. You may recognise that the symbol used in the Dear Deer logo is the Japanese symbol for the word ‘Bean’ 豆, a very fitting logo for a coffee bean roasting bar. Dear Deer uses the word ‘bar’ in the name because it shows the variety that we offer our customers. Just like at a normal bar, there are always plenty of options to choose from. Here at Dear Deer, we offer close to 50 different kinds of coffee beans from all over the world and try to introduce our customers to new ways of experiencing their coffee by offering coffee brewed in a range of different methods, which include classic New Zealand style espresso, such as flat whites, cappuccinos, long and short blacks etc, as well as traditional Japanese methods such as the use of a Kalita pour over to brew a coffee with a different taste and aroma. Our shop slogan “Your Day, Your Way” was born with the immense variety of coffee beans and brewing methods available in mind. Our goal is simple. We aim to increase the popularity of Japanese style coffee drinking around New Zealand. We strive to achieve this by introducing and educating people around Japanese brewing methods which will give people the ability to make quality coffee at home or wherever they go. While we expand the Kalita market, we want to educate people about how each coffee bean and brewing method produces a different taste and shows different characteristics. Experimenting with coffee is very worthwhile and beneficial to the consumer and knowing how to experiment is something that we want to share with everyone, because once you are able to find your perfect bean and brewing method, you won’t be able to get enough!
