I love all these recipes.

There’s certain ingredients I would swap out or take out personally.

Just because I know what works well for my body and what doesn’t.

I would only do the cheese recipes with buffalo cheese as it doesn’t have the same chemical that affects thyroid as cows, sheep or goats cheese.

Also remember to check with the cheese maker which rennets they use these days as some mainstream cheeses are now using GMOd versions which may be detrimental to our gut health.

Old school independent cheese makers are mostly the best bet.

It’s always best to choose local independent businesses to support anyway.

Spinach Garlic Meatballs Stuffed with Mozzarella

Ingredients:

1 lb ground beef (or half beef, )
1 cup fresh spinach, finely chopped
3 cloves garlic, minced
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1 large egg
1/2 tsp salt
1/4 tsp black pepper

After a few weeks of surviving the rain and trying to get our tattered reputation back in the Mahurangi we just received news of a 1.2 million litre sewage overflow from the brand new Lucy Moore pump station in Warkworth. Due to a power surge yesterday at 2.30pm. It wasn't found out until 8am this morning BECAUSE the alarms didn't work so Watercare were unaware. There's a stormwater catchment pond which bore the brunt of it but it's estimated at least 600,000 litres went into the river and now winding its way down to our harbour and oysters. This has led MPI to closing us for 28 days pending test results in the coming weeks. This was a dry weather event, not wet weather and shows huge incompetence by Watercare. They're currently sucking the pond but the damage has been done to the environment and our livelihoods again. So we are off to Kerikeri tomorrow to Joe 90s farm at Shadow Farms Oysters who will be providing oysters for us, ironically just a few hours after i did a post about his farms.

It's terrible to have this happen as we've been trying hard to get our business back up and running, that's the thing with Watercare...you never know just when you're going to have another spill event, even in dry weather...it's like an axe always hovering above your head. It brings a depth of sadness and pressure that always makes you feel wobbly but hey...they sympathize.
