This amazing journey of mine started with just a mere idea.. the crazy idea of riding a massive bike around Auckland (known to be super hilly and steep, seeing that it’s a volcanic island 🤦‍♂️) and serving coffee…

It was seven years ago that Bow & Tie found a place to call home in the amazing town of Ellerslie right next to and . It was also seven years ago that the lovely and warm people of this community slowly got to know the odd Argentinian chap making coffee on a bike early in the morning, rain or shine (mostly rain!). I still don’t know if it was pity or genuine curiosity but people came together and slowly formed a community around the bike and the coffee machine, parked right next to the footpath at 15 Kalmia Street.

Because of all of you, I was able to grow as a human being as well as a business. You made it possible for me to expand to the little hole in the wall that followed the bike and you put a smile on my face whilst brewing my favourite drink in the world. For that I will be forever grateful.

We have shared so many laughs, conversations and have made wonderful memories.. your faces, names and matching coffee orders will always be stored in my mind (I can’t seem to forget them..)

It’s now time for a new chapter for Bow & Tie, in which I hand over the lever to the Deng family (Chung, David and Sue), who come with heaps of experience and love for this amazing thing called coffee. I wish them all the best and hope that all of you give them the same warm welcome that you gave me so many years ago, making me feel safe and included.

I will now look ahead to new adventures and hope you continue the journey with me wherever I may roam! 🔜 🇪🇸

I thank everyone that was (and is) part of this lovely family, I will miss you and please know that you have made a man and his family feel very special and extremely blessed! 👊♥️

My last day at the shop will be Wednesday the 15th, so please make sure you come for goodbye hugs before then 😊

We are on our last week with our mascot, friend and best Bow&tie’s maître d’… Ms Maple. She’s given us a few weeks of cuddles, tummy rubs and pets while having our coffee! To thank her for that, we will be brewing an Organic Single Origin from Nicaragua “La Reyna” = The queen. It’s a beautiful medium bodied coffee with Maple and chocolate aromas and some roasted almonds flavour, it’s De-li-cious. Come by, only brewing it for today!

Did you know that part of our weekly grind is the act of cupping? For those of you that haven’t come across this term yet, cupping is a method of evaluating various characteristics of a particular coffee bean. It’s a process through which we can compare or contrast coffees against one another to gain knowledge about them, which we then use when we blend and brew.

The main things we evaluate are: 1) the fragrance of our dry grounds 2) the fragrance of our wet grounds 3) the acidity and spiritedness 4) the body (fullness/richness) 5) the flavour and depth and 6) the finish (the aftertaste left in your mouth)

So if you’re bored on a Saturday morning or generally keen to give yourself a challenge, why not try doing your own little cupping session.. not only is it a fun activity but we’re sure you’ll learn some new little details that you most likely wouldn’t have noticed before! ☕️👊❤️

Did you know that the word coffee comes from the Arabic word for wine, “kahve”? Even today, it is still know as the “wine of Arabia”!

Similarly to wine, research has shown that it is a good idea to swirl your coffee prior to drinking, to release its full aroma! Compared to wine, which has 250 aroma and flavour compounds, coffee is even more complex with over 1000 compounds waiting to be released!

We also think serving coffee to Mum for Mother’s Day on Sunday like this would be a great idea to further enhance the pampering and drown her in happy coffee scents! ❤️

As promised here we go on a first round of tips regarding all things milk steaming…

Firstly, make sure you’ve got a decent milk pitcher with an angled pouring spout, like these from Barista Ace, available in our online shop! (Link in bio)

Then, try to avoid these common mistakes…

Common mistake number 1:
Your wand tip is too exposed or placed too far over the milk’s surface = large bursts of air are forced into the milk resulting in too much foam or big bubbles.

Common mistake number 2:
Your wand tip isn’t exposed or placed too low below the milk’s surface = the milk will heat up but there is not enough air added to it, resulting in no foam or too little foam (called flat or wet milk).

Our aim is to find the “sweet spot”, off the centre, to create a whirlpool effect in which the right amount of air is introduced to the milk resulting in our desired, smooth microfoam.

One last thing we need to watch out for is the temperature of our milk. Aim to heat your milk between 55*C to 65*C. Heating the milk over this temperature range might denature the milk’s proteins resulting in no microfoam at all and possibly curdling. ☹️

We know how challenging and overwhelming it can feel to start this steamy journey, but hang on in there and with practice, you will whip up the perfect foam in no time!
