Roasted, in sugar syrup enhanced with ginger and a touch of rosemary.
Pannacotta, a delightful and delicate texture given weight with Origin Earth Yoghurt.
Crumbled meringue, for the added lift of some sweet crunch.

It isn’t too often that we change our Fish Burger, so here’s one to take notice of…
I’ve bent the rules a bit for this one (not for the first time either) by including a bit of CRISPY BACON. 🥓
LETTUCE.
AIOLI.
TOMATO SALSA.
MUCHO JALAPEÑO.
MOZZARELLA.
KF SEA.
I get the feeling it should all work out.
And if you ate too many you would need a work out. 💪🏼

Ironically, Whitebait season just ended and here I am with a post about a Whitebait dish. 🙄
It comes as a frozen product, so we’ll keep rolling with this for a while.
So it looks like Sushi.
It isn’t.
It’s a Whitebait egg fritter, cooked gently in a pan and rolled up and set in a cylinder in clingfilm.
After it’s chilled, we roll it in Nori.
Then it’s battered and deep fried.
Cut into 4 pieces and served with spicy pickled Daikon, Salmon roe from Akaroa, and some pretty little Nasturtium petals from my garden.
An interesting take on the classic Whitebait fritter.

As soon as the fresh Strawberries arrive, you know Summer is just around the corner….
Sadly that last thing we had with Profiteroles didn’t last so long. Had to make way for this bowl of simplicity.
Strawberries, both Freeze Dried and Fresh, dressed with a purée, you can’t see it but there is a small baked Cheesecake under all that, and on top something that we ended up calling Elderflower Snow. Looks lovely and tastes even better

We got a small fascination with bringing back the Old School. Profiteroles are definitely Old School.
Filled with Fig Leaf Cream, befriended by Chocolate Mousse, Orange Gel and Chocolatey textural bits.
Already been kicking around for a while, but you might not catch it for much longer. We’re waiting for 🍓🍓🍓
