There’s a reason our gelato tastes the way it does — and it starts with sessions like this one.

This is Stefano with Daniele, the founder of Cuore di Gelato and now our mentor. What you’re looking at is a theory session on recipe balancing — the science of building gelato recipes that are technically correct, not just tasty.

When we took over the business, inheriting Daniele’s knowledge was as important as inheriting his recipes. These sessions make sure nothing gets lost along the way.

Oh, and no Italian theory session is complete without freshly baked biscotti and a cappuccino. Some things are non-negotiable. ☕🍪
