Santa Ana, El Salvador 🍓🍓

It’s a rare lot grown high in the volcanic highlands of Santa Ana by the Ruffatti Battle Family, producers known for meticulous farming and an obsessive focus on quality.
This coffee features a green-tipped Pacamara, an elusive expression of the variety that only shows up at higher altitudes and in the right conditions. Unlike the more common bronze-tipped Pacamara, this phenotype delivers a cleaner, more refined cup, with incredible sweetness and clarity.
Naturally processed to enhance its fruit-forward character, the cherries are carefully dried to preserve balance and structure, no heavy ferment, just pure, expressive flavour. The result is a filter coffee that bursts with ripe strawberry sweetness, tropical guava notes, and a rich cacao finish that lingers long after the last sip.
We’ve roasted this one for filter, where it really comes alive, delicate, juicy, and seriously moreish. Coffees like this are produced in tiny volumes, and once they’re gone, they’re gone for good.
