In our household, well-done has always been the norm. But in the eyes of professional chefs, medium rare is the true standard.

The Michelin Guide is a world-renowned hotel and restaurant rating system that began in France. Over time, it became the most prestigious global award for fine dining.

That’s why when restaurateurs learned that Michelin would finally rate the Philippines, many felt thrilled and inspired, hoping their restaurants would be noticed or with luck, earn a distinction.

I’m happy to share that I’ve dined at four restaurants recognized with the Bib Gourmand distinction: Cochi by Marvin Agustin, Manam by Moment Group, Palm Grill, Sarsa by Chef JP Anglo. This award means the restaurant offers good quality food at a good value.

Why is this recognition so important? Because it brings prestige and international exposure. It’s like receiving an award from the global culinary community. It attracts food enthusiasts, elevates local dining, and highlights Filipino talent on the world stage.

We’ve truly witnessed how the Philippine culinary scene has evolved. Filipino chefs have become more innovative, serving world-class dishes that now match global standards. New restaurants open nationwide, showcasing the creativity and passion of our local chefs. No wonder Michelin finally noticed and decided to spotlight the Philippines. To honor restaurants that celebrate Filipino culture through cuisine. Many Filipino chefs who once trained abroad, even in Michelin-starred kitchens have returned home, bringing refined techniques and world-class standards.

So, how does Michelin do it? Their inspectors work quietly. They don’t introduce themselves, they pay for their meals, and act like regular guests. They carefully observe food quality, service, ambiance, cleanliness, and value for money. They also research the restaurant’s reputation, the chef’s personality, and culinary trends. Then, a committee reviews all reports before deciding who earns the stars or distinctions.

Indeed, it pays to dine in places with excellent food quality, distinctive flavors, consistent ex*****on, and attentive staff who know their menu well even down to allergens.

Still, many people enjoy humble meals at carinderias or “lutong ulam,” and there’s nothing wrong with that. In fact, Michelin doesn’t only recognize luxury dining. A carinderia can absolutely be included if it serves a signature dish travelers love, offers warm service, maintains cleanliness, shows creativity and skill, and delivers consistent flavor every visit.

A perfect example is Morning Sun Eatery in Quezon City which received a Bib Gourmand distinction for providing delicious food at great value. 😊👏

Truly, the Philippine culinary scene is shining brighter than ever from elegant dining tables to the comforting simplicity of our beloved neighborhood eateries.
