Jerk Salmon with Lemon and Pepper 🐟🍋🔥
📋 Ingredients:
1-2 salmon fillets (about 1.5 pounds)

2 tablespoons butter

1 tablespoon peanut or canola oil

Jerk seasoning, to taste

Lemon pepper, to taste

Salt and pepper, to taste

Lemon wedges for serving

👩‍🍳 Directions:

1️⃣ Preheat oven: Preheat oven to 200°C.

2️⃣ Heat pan: In a large pan, melt butter and heat oil over medium heat.

3️⃣ Season salmon: Coat generously with jerk seasoning, lemon pepper, salt, and pepper.

4️⃣ Searing the Salmon: Place the salmon in the pan, skin-side down, and cook for approximately 4-5 minutes, until the bottom of the pan is golden brown and crispy.

5️⃣ The Perfect Bake: Transfer the pan to the preheated oven and bake for an additional 10-12 minutes, or until the salmon flakes easily with a fork.

6️⃣ Serving: Garnish with fresh lemon slices and enjoy hot!
Serve with roasted vegetables and rice.

🥗Grilled Salmon with Quinoa, Broccoli, and Avocado Salad🥗

Ingredients:

Grilled salmon fillets
1 cup quinoa, cooked
1 cup steamed broccoli florets
1 avocado, sliced
Cherry tomatoes, halved
Cucumber, sliced
Lemon wedges
Salt and pepper to taste
Olive oil for drizzling
Fresh herbs (optional)

Instructions:

Grill the Salmon:

Preheat your grill to medium-high heat. Season the salmon fillets with salt, pepper, and a drizzle of olive oil. Grill for 4-5 minutes on each side or until the salmon is cooked to your liking. Set aside.
Prepare the Quinoa: Cook the quinoa according to package instructions. Once done, fluff with a fork and set aside.

Steam the Broccoli:

Steam the broccoli florets until tender, about 5 minutes. Remove from heat and let them cool slightly.

Assemble the Salad:

In a large bowl, combine the cooked quinoa, steamed broccoli, cherry tomatoes, and cucumber slices. Toss gently to mix.

A nutrient-dense, low-carb breakfast packed with protein and healthy fats!

📝 Ingredients:

For the Scrambled Eggs:
2 large eggs
½ tbsp butter or olive oil
Salt & black pepper, to taste
For the Sautéed Mushrooms & Broccoli:
½ cup mushrooms, sliced
½ cup broccoli florets
1 tsp olive oil
1 clove garlic, minced
Salt & black pepper, to taste
For the Avocado:
½ ripe avocado, sliced
Salt & black pepper, to taste
🍽️ Directions:

1️⃣ Cook the Scrambled Eggs:

In a bowl, whisk eggs with a pinch of salt and pepper.
Heat butter or olive oil in a pan over low heat.
Pour in the eggs and stir gently until soft and fluffy. Remove from heat.
2️⃣ Sauté the Mushrooms & Broccoli:

Heat olive oil in a pan over medium heat.
Add mushrooms and cook for 3-4 minutes until softened.
Add garlic and broccoli, cooking for another 2-3 minutes until broccoli is slightly tender but still crisp.
Season with salt and black pepper.
3️⃣ Assemble & Serve:

Plate the scrambled eggs alongside the sautéed mushrooms and broccoli.
Add avocado slices and season them with salt and pepper.
