Pasta Recipe

Ingredients

• 4boneless skinless chicken breasts, cut into 1/2 inch chunks
• 8ounces linguine
• 4teaspoons cajun seasoning (store-bought or my Cajun Seasoning Mix)
• 4tablespoons butter
• 2thinly sliced green onions
• 2 1⁄2cups heavy whipping creamor 2 1⁄2 cups half-and-half
• 4tablespoons chopped sun-dried tomatoes
• 1⁄2teaspoon salt
• 1⁄2teaspoon dried basil
• 1⁄4teaspoon garlic powder
• 1⁄2cup grated fresh parmesan cheese or 2⁄3 cup store bought pre-grated parmesan cheese

DIRECTIONS

1. Place chopped chicken and cajun seasoning in a bowl and toss until evenly coated.
2. In a large skillet over medium heat, sautée chicken in butter until tender. (Make sure chicken is 'flaky' all the way through).
3. Reduce heat and add heavy cream, green onion, tomatoes, basil, salt, garlic powder, and half of the parmesan cheese. Bring heat back to medium to a slight simmer and heat through until sauce begins to thicken.
4. Gently mix in cooked pasta and stir in remaining parmesan cheese. Alternatively you can pour the mixture over plated noodles.

Chicken Handi Recipe

Ingredients:

Boneless chicken, cubed, 500 gms
Ginger-garlic paste, 1 tbsp
Onion, 1, medium sized
Tomatoes, 3, medium sized
Yogurt, 4 tbsp
Fenugreek leaves, dried, 1 1/2 tbsp (kasuri methi)
Cream, 100 gm
Black pepper, 3/4 tsp
Garam Masala, 1/2 tsp
Green chilies, 5-7
Red chili powder, 1 tsp
Red chili flakes, 1/2 tsp
Salt, to taste or 3/4 tsp
Chinese salt, 1/2 tsp
Cumin seeds, 1 tbsp
Oil

Method:

Slice the onion and the tomatoes. Now heat oil in a pot and fry them till well mixed and the mixture leaves oil. Now blend the entire mixture with green chilies. Keep aside.
In the same pot, fry ginger-garlic paste and chicken for ten minutes. Now add the blended mixture, 1/4th cup water and the spices (red chili powder, red chili flakes, Chinese salt, salt, and cumin seeds).
Cook for two minutes and now add the fenugreek leaves and yogurt and cook for three more minutes. Right in the ends, two minutes before serving add the garam masala, black pepper and cream in the handi. Garnish with green chilies and coriander. Serve with naan!

Seekh Kabab(s)

Recipe:

Ingredients
• 1 medium onion, quartered
• 2 to 3 green chilies, or to taste
• 4 large cloves of garlic
• 2.5cm (1 in) piece root ginger
• 2 medium potatoes
• 675g (1 1/2 lb) lamb mince
• 1 egg
• 1 tablespoon gram (chickpea) flour
• 1/2 tablespoon salt
• 1/2 tablespoon chilli powder, or to taste
• 1/2 tablespoon coriander powder
• 1/2 tablespoon cumin powder
• good handful of finely chopped fresh coriander leaves
• 1/2 lemon, juiced
• 10 bamboo skewers, soaked in water

Method

1. Process the onion, green chilies, garlic and root ginger in a food processor until finely chopped.

2. Finely grate the potatoes and rinse thoroughly with water. Squeeze out as much water as possible by squeezing the grated potato in a sieve or clean tea towel.

3. In a large bowl, combine the onion mixture and the potatoes with the mince and the remaining ingredients. Mix well. Cover, and leave in the refrigerator for a couple of hours or overnight.

4. Take handfuls of the mixture and wrap around each skewer in the shape of a sausage. Place under a hot grill at the highest setting, or cook on a barbecue heated to high heat. Turn over once whilst cooking. Kebabs are done when both sides are crisp and browned, and when juices run clear.

5. Serve hot with slices of onion and lemon wedges.
