Chap chye has long had a place in Hainanese homes, where vegetables are slowly braised and given time to take on the flavour of the broth.
Our version stays close to that spirit, cooked in a savoury bean paste broth and finished with crispy prawn crackers. Added at the very end, they keep their crunch, bring contrast to the soft vegetables, and turn a familiar dish into something distinctly ours.
Rooted in Hainanese cooking, with a Seng House finish.
