It’s been a long time since I posted, so here goes.
Trotters or Paya.. A yummy meal that touches your soul. I made two varieties, 1 with spices and Kashmiri chillies & the other is a Stew with coconut milk and hence less spicy..

PAYA STEW RECIPE

Paya 4 trotters, cut & cleaned

Heat oil in a pot, add

Cinnamon stick 2 inch
Bay leaf 1 big
Cumin seeds 1/2 teaspoon
Cloves 6 to 8
Peppercorns 8 to 10

Onions thinly cut x 2 big
Ginger/ Garlic / green chilli paste - 2 tbspn

Coconut milk 1 1/2 cup
Garam masala 1/2 tbspn

Add Boiled trotters
Tomatoes 2 medium finely chopped
Cardamom crushed (3 medium pods)
Green chilli slit x 3 ( according to spice level)
Add 6 to 8 fresh curry leaves

Let it all cook together on medium till the Paya takes on the flavours & the oil is released.

Garnish with fried onions.

Add salt to your taste, once trotters are added to the sautéed spice & onion mix.

*Boil trotters in cooker with
turmeric powder - 1/2 tablespoon
Coarsely smashed garlic 3
Bay Leaf 1
Cinnamon stick 1

Coconut Macaroons

60 to 72 mini cup cake pieces
Ingredients
* 400g desiccated coconut
* 400g condensed milk
* 1 tsp vanilla extract
* 1/2 cup butter, cubed, room temp
* 1/2 cup brown sugar
* 4 eggs
*
* INSTRUCTIONS:
* Place butter and sugar in a mixing bowl and using a hand mixer cream mixture until light and fluffy.
* Add eggs and condensed milk then mix in medium speed.
* Add the desiccated coconut, mix well until well blended.
* Place in small moulds lined with paper cups then baked in a 180c preheated oven for 20 to 25 minutes or until top turns golden brown.
* Let it cool down before serving.

Goan Sausage/ Choriz potato chops.
Variations: 1) One with an egg wash and crumb coated.
2) With semolina / Rava coated.
A Saturday afternoon delight. Choose your poison to go along with it.

METHOD:

I boil the Goan sausages till cooked.
Drain out the oil and fry lots of onions in the leftover till translucent. (We can’t let the oil go to waste now, can we?)
Give the sausages a slight whirr in the processor / mixer.
Add the onion, sausages, some green chillies and fresh coriander.
The mix has to be relatively dry and no oil.
Then I take some potato and a bit of sausages and make the form.
Refrigerate it till firm. Dip it in egg and breadcrumbs. Refrigerate again and then fry.
Alternatively u can use rava/ semolina instead of egg and bread crumbs.
Hope u get a chance to try it out.

Kebabs.

KEBABS

MINCE - 500 gms
Onions -3 (finely chopped)
Chillies 4 to 6 finely chopped
Coriander - finely chopped bunch
Ginger & Garlic paste - 2 tablespoons

Red chili powder -1 teaspoon
Garam Masala- 1 teaspoon
Coriander powder 1 tablespoon
Cumin powder 1 teaspoon
Fennel seeds powdered - 1 teaspoon
Dry mango powder -1& 1/2 teaspoon
Roasted Chickpea Flour - 3 tablespoons

Egg x 1 beaten (pour slowly into the mixture as it shouldn’t get too mushy)

Salt to taste

Add 3 slice bread dipped n water n squeeze out water

Mix all the ingredients well & chill for at least 1 hour.
Make small balls n deep fry till golden brown.

Prawn and Ladyfinger with Raw Mango curry.
This recipe is born out of Pure Love and memories.

It reminds me of my grandmother and me sitting on her lap when I was around 4 and helping her grind the masala on the big round stone. All this is born out of those beautiful memories.

Prawns 300 gms
Bhindi - 1/4 kg to 1/2 kg

Curry:-
Coconut - 1/2 grated
Kashmiri chillies - 6 to 8
Coriander seeds - 1 tablespoon
Jeera - 1 teaspoon
Pepper - 10 corns
Ginger - 2 inches
Garlic - 10 cloves
Green Chillies slit - 4
Mustard seed- 1 teaspoon
Curry leaves- 1 sprig
Turmeric powder - 1 teaspoon
Tamarind small ball - small lime size
Raw mango - 1/2 (optional) or Tomato 1
Salt to taste

1. Prawns, clean and marinate with 1 tablespoon lime and 1/2 teaspoon turmeric and 1/2 teaspoon salt.

2. Roast onion then coconut and then all the other dry ingredients except Kashmiri chillies, dry roast SEPaRately.

3. Grind the roasted ingredients , ginger, garlic, tamarind, turmeric and salt.

4. Add oil, heat then add mustard seeds, curry leaves and ground masala paste and cook till oil separates.

5. Add ladyfinger, raw mango or tomato, green chillies and add 1 cup water and cook till lady’s finger is soft. (Should not be completely soft, I like it a bit crunchy) ( check the salt)

6. Once the curry is cooked add the Prawns and then turn off the gas after 2 minutes or you will overcook the prawns.

Garnish with fresh green coriander.

Serve hot with boiled rice. (Red Rice is a better compliment)
