We have a new Discourse & Dissent pairing!
This box set series features two rotating coffees from different areas of the tasting spectrum. Our fifth set of the series features two different varietals of coffee whose origin, processing, and roasting are similar. Both come to us from Anny Ruth and her team at the outstanding Coffee.
PACAMARA:
The Pacamara variety is highly prized for its exceptional cup quality. A hybrid of the varieties Pacas and Maragogype (themselves mutated from Bourbon and Typica varieties), Pacamara took about 30 years to create. It’s a fickle plant that doesn’t yield much coffee; it accounts for less than 1% of El Salvador’s coffee plants. Despite that, it continues to be grown extensively in El Salvador and beyond.
Flavor-wise, you can expect an elegant balance between a full-bodied, chocolatey cup and its fruity acidity.
YELLOW BOURBON:
Primarily found in Brazil, Yellow Bourbon is a cross between Bourbon and Yellow Typica varietals. Bourbon and Typica are both highly prized and culturally important varieties; they were first brought from Ethiopia to Yemen, and then were spread throughout the coffee-growing regions of the world.
Like Pacamara, Yellow Bourbon features distinct high-quality flavors, but it has a brighter, punchier citric acidity that harmonizes well with ripe fruit notes and a full, sweet flavor.
