Comments:
Since we had entered in the Australian International Coffee Awards 2020 last year and received a bronze medal for pour over, single origin class – Ethiopia Yirgacheffe Aricha. We decided to not announce any news on our FB fan page due to a few reasons: first of all we wanted to make sure that we could reproduce the same thing regards to the judge’s comments, next the coffee was too fresh, then tasted like a garden pea when we were trying to roast a lighter roast profile (Nordic-style).

Luckily, almost a year later we have found that it tastes good without such unpleasant green flavour which we can roast as light as we want to highlight its herbals top notes like Chrysanthemum and Camomile.

This is the best of Panama 2020 Coffee we have tasted, which the imported green beans has been arrived to our home roastery only a few days. As we know that The Hartmann family is considered one of the well-known specialty coffee producer in Panama who make a consistent high-quality coffees for many years so we aim to do a very simple roast profile as trying to be as transparent as possible, and the result is so fantastic! especially the incredible sweetness & balanced flavours.

โรงคั่วกาแฟออเรนจ์บีน ขอกราบขอบพระคุณทุกท่านที่กรุณาสนับสนุนโรงคั่วเล็กๆแห่งนี้ด้วยดีเสมอมา ไม่ว่าจะเป็นเมล็ดกาแฟร้อน กาแฟเย็น กาแฟเอสเพรสโซ่เบลนด์ กาแฟดริป และกาแฟเกรดพรีเมี่ยม

ทั้งนี้ เมล็ดกาแฟทุกรายการข้างต้นที่ตกค้างจากสัปดาห์ที่แล้ว รวม 58.75 กก เนื่องจากติดบำรุงรักษาระบบประจำปี ได้ตีตั๋วโดยสารขึ้นรถด่วนสาย Kerry Express เป็นที่เรียบร้อยแล้ว และคาดว่าจะถึงมือทุกท่านภายในไม่เกิน 1-2 วันนี้

Finca La Pastora Black Honey - 2018 Crop

🇨🇷 Costa Rica เป็นประเทศที่เกษตรกรมีความเชี่ยวชาญในการแปรรูปกาแฟ แบบ Honey Processing Method ที่มีคุณภาพในระดับสูงและเป็นที่ยอมรับอย่างแพร่หลาย และทำให้เราเริ่มคุ้นชินกับคำว่า

Black Honey
Red Honey
และ Yellow Honey

Black Honey จัดว่าเป็นวิธีแปรรูป ที่ค่อนข้างละเอียดอ่อนและต้องการการเอาใจใส่มากกว่าแบบอื่นเป็นพิเศษ ตั้งแต่ขั้นตอนการคัดเลือกเมล็ดกาแฟที่มีระดับความหวานตรงตามมาตรฐาน แล้วนำมาสีเปลือกออกโดยพยายามให้เหลือเนื้อกาแฟติดไว้ให้มากที่สุด

จากนั้นจึงนำมาตากไว้บนแคร่ที่แยกไว้เป็นพิเศษ โดยจัดไว้ในบริเวณที่มีแสงแดดและอากาศถ่ายเทในปริมาณที่เหมาะสม เพื่อให้เมล็ดมีโอกาสดูดซับความหอมหวานจากเนื้อกาแฟที่เหลือไว้อย่างช้าๆ ช่วยให้เมล็ดกาแฟที่ได้มีโครงสร้างที่แข็งแรง ไม่เปราะง่าย และแห้งอย่างสม่ำเสมอ รวมถึงลดโอกาสเกิดเชื้อราหรือเกิดกลิ่นหมักที่ไม่พึงประสงค์ อีกด้วย

Costa Rica Black Honey ล็อตนี้ เดินทางมาจากฟาร์มในเขต Santa Maria ที่ปลูกในระดับความสูงเฉลี่ย 1,950 เมตร จากระดับน้ำทะเลปานกลาง ซึ่งส่วนใหญ่ปลูกคละสายพันธุ์ระหว่าง Caturra และ Catuai

หลังจากนำมาคั่วในระดับอ่อน เพื่อประเมินคุณภาพเบื้องต้น ในสไตล์ที่ขัดใจ cupping protocols บ้างอะไรบ้าง ได้ความว่า

จิบแรก สัมผัสได้ถึงความรู้สึกในปากที่ลื่น มัน นัวร์ กลมกล่อมกำลังดี หรือเรียกให้ดูหล่อๆคูลๆ ว่า creamy mouthfeels & balance

ทิ้งไว้สักพัก รอให้อุณหภูมิเย็นลงอีกสักนิด จะเริ่มได้กลิ่นเหมือนผล prune และ cherry สุก สีแดงอมม่วง

ภายในปาก ลิ้น และกระพุ้งแก้ม เลยไปถึงลำคอ อบอวลไปด้วย flavor หอมหวานฉ่ำ (sweet & juicy) และในบางจังหวะจะมีรสเผ็ด (tart) ให้พอจับได้บ้าง

สิ่งที่หลงเหลืออยู่ ระหว่างนั่งชมนกชมไม้เพลินๆ คือกลิ่น milk chocolate & buttercream เบาๆ ที่ลอยมากระทบโสตประสาทให้พอเป็นกระษัย เป็นที่ถูกอกถูกใจ คุณย่าทวดสูงสุด ยิ่งนัก จนถึงขั้นกระโดดเตะปี๊บ ดัง ปัง ปัง ปัง!
