some pilot work on a southern indian iyengar bakery utility delicacy -
the bread toast .
as a millennial growing up in the south, perhaps one would recall eating this “bread toast “ snack in bakeries way before the naans and rotis made its way to southern indian streets .
this lukewarm / hot , tasty to the accurate extent - enough carrots , tomato , potato and perhaps some coriander was a clever creation by the unknown names ,to keep you interested .
legend has it that “ the bread toast “dish was a clever way to use the freshly made bread loafs the previous day .
zero or minimal waste has been there for a while perhaps.
Our take will have beans and dals on top of plant based bread.
