Agretti is back in season. Also known as monk’s beard, it has a naturally salty, mineral quality and a texture somewhere between wild grass and a succulent. In Italy, it’s normally served very simply (blanched and dressed with olive oil and lemon) letting the ingredient speak for itself.

Back on the menu for a short time while the season lasts.

Tucked into a narrow valley along the southern end of the Amalfi Coast, Cetara is a working fishing village more than a postcard. Anchovy boats still leave at night and return at first light. Above the harbor, lemon terraces hold to the hillsides. Life here moves at a slower, more practical pace, shaped by the sea and the seasons.
