WASABI | More Than Just Heat
Fresh wasabi is prized for its delicate balance of sweetness, subtle herbal notes, and clean, aromatic heat.
Unlike the sharp, lingering burn of chili, wasabi delivers a gentle intensity that rises quickly and fades, allowing the natural flavors of the fish to shine through.

Rikka Plum Ice Cream
Rikka plum, also known as Japanese sumomo, is a summer favourite in Japan. Sweet with a gentle tartness and wonderfully refreshing. We serve it with a silky jasmine green tea pudding and amazake, bringing soft notes of tea and rice. A toasted rice tuile adds a sweet, nutty crunch, and a touch of red w**e on top brings the plum's brightness forward even more.
A light, fresh way to close the meal.

In remembrance of His Majesty King Rama V, the king who opened Siam to the modern world. He abolished slavery, built the country's first railways and schools, and laid the foundations of the Thailand we know today.

Shiromi Maki

Konbu cured white fish, rolled in pickled daikon and rice vinegar jelly with bainiku and shiso inside. Finished with a pansy. Quiet, bright, beautifully balanced.

REGULUS 2024,
Named after the brightest star in Leo, this one comes from Abe Shuzo in Niigata, part of their star series where every grain of rice is grown within 30 kilometres of the brewery. White koji gives it a bright citrus lift, light on the palate and easy in the glass at around 13 percent.
It is the kind of sake that keeps the conversation going through a long omakase, quiet enough to let the fish speak, alive enough to hold your attention.
