we are becoming a cocktail bar for
one. night. only!

the cool cats at are taking over our entire bar. serving not just a custom cocktail menu featuring some of our ferments by , but will be spinning vinyl all night long. just like us modern day has a signature flavor and sound, and we can’t wait to serve our food up with it.

we’re digging into our coziest and most comforting fermentations and flavors to bring you the perfect nothing sacred à la carte menu. every bite we ever gave you that you wish had more, this is your night 😋 we are opening up our balcony for the first time ever to make sure everyone gets a taste of nothing modern.

we’ve been cooking up something a little different…

pen shell (หอยจอบ) & moromi

a serving of raw pen shell from the gulf of thailand, seasoned only with fava bean-black rice moromi and fermented green mango.

first we dry age the pen shell abductor muscle for 2 days, maximizing the taste and texture. our moromi is made by inoculating local fava beans and toasted black rice with a specialized soy sauce koji spore. after the koji takes hold of the beans, we ferment the whole lot with sea salt and water for about 5 months. on the side is green mango that has been aged for 2 weeks in a blonde miso we previously fermented for 2 months.

we join all our wonderful chinese and thai chinese friends and family in celebration of a new year. as the world navigates new and unique challenges we revel in the chance to celebrate. may the year of the horse remind us that life is not about the end result, but about every important step (and fall) we take to get there. we encourage our guests this weekend to explore the best neighborhood in bangkok (our home of chinatown) and enjoy the festivities.

our southern style biscuit is made using a 3 month aged miso we make using local soy beans. we top it with freshly steamed mud crab from surat thani, fermented local cream, house of koji hot sauce and raw cows milk cheese from chiang rai.

merry christmas & happy holidays from our family to yours. we can’t wait for our first christmas day service with all of you tonight. our santa hats are ready, the tree is lit, and we’re ready for a beautiful christmas dinner, nothing sacred style 🐱
