From Mu Se, where the Shan mountains lean into Yunnan… to Tokyo, where the nights hum with izakaya lights.

Chef grew up at the edge of borders — where Shan, Chinese and Burmese flavours blur into one. Years later, she found herself in Tokyo, mastering the quiet precision of Japanese cooking, and falling deeply in love with the world of ji-zake.

Namsu is that journey.

Not fusion. Not imitation.
But a collision of memories — single grain rice, both eaten and drank. Fermented beans and miso, charcoal smoke and mountain herbs, sake and Shan spice.
